Hi Rug im from Aruba 🇦🇼 and iguana is a regular dish for us it's like a culture dish actually , but in Aruba you will find most of the dishes made in soup , I have never heard about iguana sausage but it's looks very delicious🤤

I am from the trinidad and Tobago🇹🇹 we are located in the caribbean (if one don't know) and Iguana is a delicacy here along with, manicou "possum", agouti, wild hog, deer, cayman etc.(during hunting season). Hearing about Iguana sausage is soooo funny I have never seen it cook like that before. We usually curry and stew it with coconut milk and trust me you would love it 😀 😋

It's a bit chewy but we love it anyways. But mostly Trinidad and Tobago eats iguana, I'm not sure of the other Caribbean countries.

I live in Puerto Rico and we have alot of iguanas. They got to a point where they were so much someone decided to cook them and said taste like chicken so that is where chicken of the tree came from. There is company that ships them to restaurants and specialty stores. I just know I won't be eating one. Awsome video.
