Ebesesi, Ebessessi or commonly written "Yébessessi" (which would be a misnomer, as with many names of dishes around the world that we end up spelling phonetically), is an extremely popular dish from Togo. This essential dish is, in all its forms, very simple and a perfect vector of joy for those who share it. Perhaps due to the amount of chili 🥵🌶️, a major ingredient as the name suggests, "Ebese" or "Ebessé" meaning chili.
It is obvious that we must immediately point out that this dish is also very popular and equally appreciated in Ghana under the name of "Fresh shito", "Red pepper sauce" or even "kpakpo shito" (a small name taken from this famous Ghanaian pepper, similar to the scotch bonnet of the region) and in Benin under the name of "Moyo", which also no longer have to make themselves known.
But much more, it recalls all those small accompanying sauces that fall into the category of "Small Juice [of tomato and onion]" as commonly called between Benin, the Ivory Coast or even Togo without going too far away. of this region and of this typical dish.
It goes without saying that this dish can be cooked in many ways and is accompanied by an almost endless variety of fish. From large braised, fried or smoked fish to all varieties of small dried, salted, smoked or fried small fish or fry, including sardines, the little "guilty pleasure" of some. Meat and poultry are rarely used.
[Obviously] This recipe is prepared with different methods which differ mainly in the freshness, half-cooking or cooking of the ingredients. Indeed, in Togo it is either prepared without any ingredients being cooked, or part is half-cooked or braised with charcoal, or is lightly cooked.

Le Ebesesi, Ebessessi ou communément écrit "Yébessessi" (qui serait un abus de language, comme avec bien des noms de plats à travers le monde que nous finissons par épeler phonétiquement), est un plat extrêmement populaire du Togo. Ce plat incontournable est, sous toutes ses formes, d'une grande simplicité et un parfait vecteur de joie pour ceux qui le partagent. Peut-être en raison de la quantité de piment, un ingrédient majeur comme l'indique le nom, "Ebese" ou "Ebessé" signifiant piment.
Il apparaît évident que nous devons tout de suite préciser que ce plat est également très populaire et tout autant apprécié au Ghana sous le nom de "Fresh shito", "Red pepper sauce" ou même "kpakpo shito" (un petit nom tiré de ce fameux piment Ghanéen, similaire au scotch bonnet de la région) et au Bénin sous le nom de "Moyo", qui n'ont plus également à se faire connaître.
Mais bien plus encore, il rappelle toutes ces petites sauces d'accompagnement qui entrent dans la catégorie des "Petit Jus [de tomate et oignon]" comme couramment appelé entre le Bénin, la côte d'ivoire ou encore le Togo sans trop nous éloigner de cette région et de ce plat typique.
Il va s'en dire que ce plat se cuisine d'innombrables façons et s'accompagne d'une quasi infinie variété de poisson. Du gros poisson braisé, frit ou fumé à toutes les variétés de petits poissons ou fretins séchés, salés, fumés ou frits, en passant par la sardine, le petit "péché mignon" de certains. La viande et la volaille étant rarement utilisées.
[Forcément] Cette recette se prépare avec différentes méthodes qui diffèrent principalement par la fraicheur, mi-cuisson ou cuisson des ingrédients. En effet, au Togo soit elle est préparée sans qu'aucun ingrédient ne soit cuit, soit une partie est mi-cuite ou braisée au charbon de bois, soit est légèrement cuite.
