Ingredients:
4 hard-boiled eggs, peeled and halved
3 onion, thinly sliced
1 bell pepper (any color), thinly sliced
green chilies, sliced (adjust according to your spice preference)
2 cloves garlic, minced
1-inch piece ginger, minced
2 tablespoons soy sauce
1 tablespoon tomato ketchup
1 tablespoon vinegar
1 teaspoon sugar
Salt to taste
2 tablespoons oil
Instructions:
Heat oil in a pan or wok over medium-high heat.
Add minced garlic and ginger, sauté for a minute until fragrant.
Add sliced onions and green chilies. Cook until onions turn translucent.
Add sliced bell peppers and continue to stir-fry for another 2-3 minutes until they are slightly tender but still crisp.
Pour all the sauce into the pan. Stir well to combine with the vegetables.
Gently place the halved hard-boiled eggs into the pan, yolk-side up.
Let the eggs simmer in the sauce for 5-7 minutes, allowing them to absorb the flavors.
Occasionally spoon the sauce over the eggs to coat them evenly.
Once the sauce thickens and coats the eggs well, turn off the heat.
Serve hot with steamed rice or noodles.
