Ingredients and recipe (detailed) - Empty contents of the tomato. (Save the inside contents for later use) Fill it up with one egg. Add red chilly powder, turmeric and salt And a squeeze of lime. Cover the tomato lid and fix a thorn (Tip: Use a toothpick :) And set aside. Heat (coconut) oil in a pan. Add mustard seeds/ cumin seeds/ coriander seeds. Add medium chopped onions. Add (mild) green chilies chopped 1/2 inch Add fresh bay leaves (Also called curry leaves or 'kadi-patta' or 'tadi-patta' something ) Add the inside tomato contents you saved earlier. (see above) Add red chilly powder, turmeric, salt and stir. Place the egg-tomatoes in the pan and let it cook. PUT MORE FIRE. Stir. Gaze at the tomatoes. Garnish with cilantro (cut with hands, no knife or chopping board allowed) and bay leaves. Taste before serving. Serve on a banana leaf with white rice. ENJOY !

Ima having a guess at this recipe - feel free to correct/improve below! 5 Large Tomatoes 5 Eggs 3 Lemons 1 Red Onion Chickpeas or sweetcorn or something Green Chillies Curry Leaves Coriander (Cilantro for left-pondians), a big handful Rice Paprika Turmeric Cocktail sticks Prepare 3 cups of rice Slice the lemons in half and put to one side Slice the tomatoes around the top in a circle to make a lid you can remove. Scoop out the insides of the tomatoes in to a bowl and save them Crack an egg in to each empty tomato, along with a pinch of paprika and a pinch of salt and a pinch of turmeric also add a squeeze of lemon. Put the lids back on the tomatoes and secure with a couple of cocktail sticks Very coarsely dice the onion Half fill a pan with oil and heat vigorously. Before the oil hits its smoke point, throw in a small handful of... chickpeas/Sweetcorn?? Throw in the diced onion Chop the Chillies into 2cm pieces and throw that in too, give it a stir Add a good handful of curry leaves Throw in the tomato insides saved from earlier and season with a few pinches of salt Add Turmeric 2 tbsp. Add paprika 2 tbsp. Put the tomatoes in the mixture and cook for... a while... at least until the egg has done "PUT MORE FIRE" Add a big handful of coriander (Cilantro), torn into rough pieces Add some more curry leaves. Stick the rice into a banana leaf and chuck the tomatoes and sauce in there too and everyone eat with fingers. Failing that serve in a bowl and use spoons.
