Brookies- Makes 10 large ones
Ingredients :
Almond flour - 50gms ( ½cup )
All-purpose flour - 50gms ( ¼cup )
Cocoa powder( unsweetened )- 25gms (¼cup + 2tbsp )
Baking powder - 1tsp
Baking soda - ½tsp
Butter (softened )- 75 gms (¼cup + 2tbsp)
Jaggery powder- ½cup
Dark chocolate ( chopped ) - 150gms ( about 1 cup)
Vanilla extract - 1tsp
Milk - 2tbsp
Dark chocolate chips - 50 gms ½cup
Instructions:
1. Sift both the flours, baking powder, baking soda & unsweetened cocoa powder; keep aside.
2. Place the dark chocolate in a microwave safe bowl & microwave it in intervals of 15 seconds at a time, stirring the mixture in between, till the chocolate is melted & without lumps. You can do the same on a double boiler too. Keep aside.
3. In a deep bowl, beat the butter & jaggery together till pale.
4. Now add the melted chocolate & vanilla extract & whisk again till incorporated.
5. Add the sifted flour in parts using a spatula; gently fold all the flour in.
6. Cover the bowl & refrigerate for about 20 minutes. (Optional)
7. When ready to bake the brookies, preheat the oven to 175° C. Line a baking tray with a little oil & place a parchment paper on it.
8. Using an ice cream scoop or a tablespoon, scoop out even sized portions of the dough, spacing them well apart on the prepared baking tray.
9. Bake for 13-14 minutes (place one below the centre rack). To check if they are done or not just touch them lightly on top, if firm to the touch they are done.
10. Take them out & place the tray with the brookies on a cooling rack.
11. Once completely cooled, pounce on them or store them in an airtight container.
Recipe Note- If you don’t have the time to refrigerate the brookie dough, bake only for 12 minutes & remember to preheat the oven when you start prepping. These brookies will be slightly flatter as they will end up spreading more. However, they will taste equally amazing.
