Eggless Mojito Cupcakes | No booze recipe | Mint Buttercream with Lemon cupcakes

Hey guys! Let's make some eggless Mojito cupcakes :)
The best part about these cupcakes is that it contains no booze and is kids friendly. It combines the fresh flavors of mint and lemon with cupcakes. I thought of sharing a summer recipe other than mangoes for this season.
You can make them for your summer occasions for that extra tropical feeling!
Ingredients :
For cupcakes-
Butter / oil 38g
Castor sugar 50g
Curd 63g
Fresh Lemon juice 2 to 3 tbsp
Lemon zest according to taste
Maida 88g
Baking powder 1tsp
Baking soda 1/2 tsp
Milk / water 1.5 tbsp
Yellow colour 1 drop
Bake the cupcakes in a pre heated oven for 15-20 mins at 160-180 degrees Celsius or until done.
Yields medium sized 8 cupcakes.
For mint buttercream-
Unsalted butter 60g
Sifted icing sugar 160g
Milk / water 5g
Mint essence 1 tsp
For garnish-
Mint leaves
Lemon wedges
Straws
Storage - can be stored for 3-4 days in the refrigerator in an airtight container.

Hey Aditi... recipe is really nice ..which butter did you use( brand)? I used amul white butter but didn't like it's taste... your butter looks yellow...but mine was white

You can definitely try, but using this recipe is preferable

You can use, but it tends to contain high water levels, and the batter might turn out runny

If you remove mint essence, the concept of mojito is voided. But, if you want, you can try vanilla essence
