I am vegan and was looking for a perfect cake recipe for so long. Believe me when I say that I have tried and tested so many recipes but only this one works the best. As is said I am vegan i.e. I don't consume any animal products no meat, dairy or eggs. I tried this recipe very carefully exactly how it has been shown with my home made peanut curd and soy milk. My cake has turned out to be gorgeous. I am so relieved that my search for a perfect sponge/tea cake recipe ends here and I cannot wait to make it again and again using different flavors.

From last five years I am making cakes on birthdays of my family members. I have tried various recipes without egg (cakes with milk powder or condensed milk etc.) None of them turned so well like this recipe. I just loved this one.. the cake is also good for frosting or ganache decorations. I did a little variation in recipe. As we do not get sour curd I added half spoon of vinegar and baked cake in otg instead of pan.

1/2cup curd 1 cup sugar 1 tsp vanilla essence 1/2 cup vegetable oil 1.5 cup maida 1tso baking powder 1/2 tsp baking soda 3/4 cup milk(mix gradually ) Preheat the cooker on low flame for 5mins Cook on low flame for 40-45 mins

Excellent cake recipe. Thanks for sharing. Very moist. And also I bakes a small cake and put in the oven 180 degrees for min 30 mins or till tooth pic inserted comes out clean. Thanks again.
