🍆 Eggplant dishes are beloved by so many people! Eggplants are well sought after for a number of reasons. They are low in calories and help with anti-aging and relieving eye fatigue. Moreover, they can turn into a literally limitless number of dishes according to how you cook. Today, we’re making eggplant sotbap by browning eggplant with oil and adding it to doubanjiang-seasoned minced beef.
The combination of soft and mild eggplant and fail-proof savory beef is just perfect, so please don’t forget to try it at home!With this magical recipe, your rice on the dinner table will vanish even without any other side dish.
🍆 [Eggplant pot rice] 3~4 servings
- Ingredients: 2 eggplants, minced beef 200g, 2 cups of soaked rice, 3 garlic cloves, 3 stalks of small green onion, a desirable amount of cooking oil, 2 cups of kelp stock
- Soya meat marinade ingredients: 1 tbsp of soy sauce, 1 tbsp of doubanjiang, 1 tbsp of sugar, a half tbsp of minced garlic, a small amount of sesame oil, pepper to taste
- Sauce ingredients: 3 tbsp of soy sauce, 1 tbsp of cooking oil, 1 tsp of minced garlic, 2 tbsp of finely chopped cheongyang chili pepper, 1 tbsp of sesame oil, 1 tbsp of maesil extract, a pinch of sesame seeds, pepper to taste
1. Cut the eggplant into halves lengthways and then into pieces of the desired size.
Slice the garlic, and chop the small green onion.
(tip. If you use a potato peeler to remove the eggplant skin here and there, you can enjoy a softer texture.)
2. After removing red liquid from the beef, place the beef in a bowl and add the soya marinade. Toss to marinate the beef.
Mix all the seasoning ingredients in a bowl.
3. With a dash of oil in a heated pan, brown the eggplant and transfer to a plate.
Stir-fry the marinated beef in the same pan you cooked the eggplant.
(tip. Cook each side of the eggplant well, but be sure not to make it mushy.)
4. With a dash of oil in a heated pot, stir-fry the garlic. Then add the soaked rice and stir-fry.
Pour the kelp stock into it and cover. Give it a simmer over medium heat.
5. Once it starts to boil, lower to low heat and cook it for another 15~20 minutes. Remove the heat, add the cooked eggplant and beef to it, and let it sit covered for 5 minutes.
6. Place the chopped small green onion atop, and slightly stir with a rice spatula. You can serve a soy sauce seasoning blend to your taste.)
