I sometimes watch with the auto-generated captions and can't help but notice every time there's dishes or cutlery clattering, or mixing happening, it says "[Applause]." So sometimes I quietly clap just so that isn't wrong.

I always asked my kids to take a “thank you bite” if I cooked. It was a respectful way to say thank you, try the food and if they didn’t like it, it was fine. They at least tried it. 🤷🏽‍♀️

When mine were younger, we called it a polite bite. Momma worked hard to feed you, be polite and take a bite. They mostly liked everything... or at least wanted to be polite to me and ate what I made. Also, we have had money issues (single mom of 4 with 3 jobs at some point) they knew food cost money, try not to waste.

@@xerrias i understand your just trolling and thats fine i am actually talking to others that read this. raising children is so much more than feeding them and clothing them. teaching them thankfulness and manners are also just as important. gratitude is something sorely lacking in our world right now..so is common decency and respect for others needs and opinions. as for me and my house we shall serve the Lord and his teachings of gratitude and grace.

Emmy, I think the cupcakes were too wet because you used the full can, instead of the half can listed in the recipe on the label you showed (at 1:34). The recipe on their website lists a full can, but that is the 14.5 oz can. It might also explain the overly hammy flavor!

Other commenters noted the recipe calls for half the can of greens not the entire can. Also it appears you didn't thoroughly rinse the greens to reduce the savory flavor. I think this recipe deserves a redo.

I would definitely dry and rinse better, but i'm guessing that's the limitations of her studio. seeing her mistakes explained and my experiences making cakes with spinach, I'd probably try it with the whole can...or just get fresh greens hearing it's turnip and mustard. I tend to get this brand all the time on clearance, so I love another way to use them if we get bored! And they always have mustard greens, so I imagine a can of those might work here...

@@trashcatlinol yeah, more rinsing, try to get an unseasoned version (even if another brand), and maybe even press them in the strainer (not just let them drain, or shake them lightly) to make sure as much liquid as possible is removed?

@@lucasgardner6189 As a former damned Yankee, I agree with both of you. Learned to love them in school lunches cooked with some kind of pork fat and topped with white vinegar steeped with jalapenos. Just spent the last two days eating trough a five pound bag of them and tonight I'm working on 2 pounds of frozen turnip greens. Ya all taught me something while I lived down there and it has stayed with me for 50 years.

This recipe reminds me of my old professor. He used to eat chocolate covered Kale because he wanted the nutrients from kale but couldn't eat it on its own 😂

Actually not a bad idea. Most of the good for you nutrients in Kale are fat soluble.

I didn't like veggies as a kid, & I don't like most of them now; however, when my daughter began eating solid foods, I knew I had to change my approach for her. So I ate veggies. I couldn't let her see me sweat it, no matter how awful they tasted (or felt in my mouth). I would pretend to chew some things & then swallow them down (erf...mushrooms!). Her plate looked like a mini version of ours. If she didn't eat something, we didn't make it a big deal. We didn't make it a big deal when she _would_ eat something either. What happened was cool, tho. For example, let's say she ignored cabbage the first few times it was served. The fourth time, she simply started eating it. I don't know if she just wasn't paying attention or if she was hungrier that day, but down it went as if she had been eating it all along. As she got older, she just ate what was served; only varying in the amount, given her level of hunger. She's 18 now (just graduated high school today, actually...w00t!), & she has a wonderful, even an adventurous, palate! It worked or we just got really lucky!

That is the same when i was young too lol, i would hate certain veggies but by the age of 8-10 i would just gulp down anything, i stopped being a picky eater. Congrats to your daughter! Im graduating too this june :D

I took a similar approach re: keeping my cool around insects so she wouldn't grow up frightened of them; however, my mom, who _freaks out_ around bugs, lived with us for a couple of years when our daughter was 5-6 yrs old, & just completely undid all of that chill I tried so hard to maintain! 😁I guess her schwarz was more powerful than mine! 🤷‍♀️

Emmy, your cupcakes were "hammy" and too moist because you put the whole can of greens in. You can see at 1:35 the recipe says 1/2 can.

My rule was always that kids had to take a bite of everything. If they didn't like it, they could have more of something else Very often, if they tasted the food, they would eat it. More often, after a few tries they would start to like it. Kids need to try new foods quite a few times to develop a taste for some foods. We never had food stand offs at my dinner table.

I learned in my college nutrition class that it can take kids up to 20 different exposures to a new food for them to develop a taste for it

This reminds me of my mom’s chocolate zucchini cake. Basically chocolate cake with blended fresh zucchini in it. It’s less sweet than regular but really good this way actually.

Emmy, my grandmother taught me to cut a rectangle out of a paper plate from edge to center about 1/4 inch, slide the beaters in the groove and place the plate over the mixing bowl, like a lid. This helps keep dry ingredients from escaping the bowl. Works great!

Ugh that’s exactly what this video gave me flashbacks to - every summer my mom would make chocolate cake/brownies with shredded zucchini added in and I always was furious why we couldn’t just have the “normal” version without a bunch of stringy bits in every bite ruining it 😅🤢

With my picky children and thier far pickier friends I have learned that mixing in vegetables to sweets usually does not deceive children. But they usually don't mind anyway.

As an early childhood educator, I'm no expert on child nutrition, but what I do know, is that the most recent best practice is to not bother having battles about what your child eats, but continually offering new or disliked things alongside things you know your child eats. The less pressure you put on them, the more likely it is that they will learn to try things and have a more well rounded diet as an adult. Children also have vastly more taste buds than adults so bitter things taste much more bitter to a child as well. So if anyone wants to judge you for what you said about feeding your child... they can move right along and keep their judgements to themselves. You are an awesome mom!!

My dad always told me I had to try it before saying I didn’t like something and I’ve taken that through my whole life and found so many foods I never would’ve thought I liked because of it

Also, if a child has a picky parent they will emulate that parent. If mom or dad refuses to eat vegetables the kids will be the same. If the parents suck it up and eat their vegetables and other foods (without complaint), they will have children with a more varied palate.

In my family, we're never made to eat anything, only try it. A lot of times it's simply the color or appearance of foods that kids don't like.

And texture. Adults sometimes forget how things eat to a child. I almost gagged eating certain things are a child in its regular state, but could eat it if you pured it or something.

As a 20yo adult, I absolutely agree. There are sooo many foods I refuse to eat because I just know the texture will make me want to throw up. Shrimp for example, the texture is so weird and I absolutely hate it.

The books are called "Deceptively Delicious" and "The Sneaky Chef." I own both books still. I really liked the chickpea chocolate chip cookies.

Those would probably be good, because chickpeas are pale in color and mild-flavored. I've long heard that brownies with black beans in them are also quite good.

My then neighbor Sadie once came over for dinner and brought us a 'pumpkin pie.' When she went home, she found the pumpkin puree in the refrigerator. But her butter bean puree, (larger lima beans that are beigey instead of green), were missing. She had made a lima bean pie, with pumpkin pie spice --and it tasted great.

I still make swiss chard Christmas pie every year, because I grew up eating it. So this doesn't seem weird to me at all. I'd totally eat those... I suspect it'd be better if you used boiled greens without fake smoke flavor though.

I think you could make this with a different brand of greens that did not have the smoke flavor. They add that so it will taste like it was cooked with ham-hocks the traditional "Southern style".

My parents used reverse psychology to get us to eat things. Brussels sprouts were “too good for kids,” and they didn’t let us have any, even though we asked for some! The next time they hit the table, we BEGGED for sprouts, and to this day, we all love them!

Love your little “speech” about not disguising veggies in your kids’ foods. I am the same way. My oldest and youngest really like veggies. My middle child doesn’t. I don’t like a lot of stuff that I’m sure would be good for me. I’d hate it if someone hid it in my food. =)

I do the same thing with my kids when it comes to veggies. I never EVER force them to finish them if they don’t like them, but make them take one bite just to try it. If they don’t like it, that’s okay. But I reintroduce the veggies once in a while in a different form (fresh vs cooked, in rice or in soup, etc) and see how they tolerate it. Just gotta show them the many possibilities. Almost always works. Mine are 7, 9, and 10 and will tear up veggies now in all different forms.

This is our favorite frosting! We love the tanginess that comes from the cream cheese. It’s definitely easier to mix in a stand mixer than with the hand mixer though. 😊

I actually like hidden veggie foods for myself! I sometimes choose veggies but never enough for the recommendations. I’m much more likely to choose sweets. I especially love hidden veggie muffins for breakfast. I normally eat muffins and other carb heavy foods for breakfast, so adding some extra vitamins is a bonus for me

Totally agree with your approach regarding your children and vegetables. We had stand offs with my oldest, then we decided we wanted streas free fun family dinners with our little people. Now our kiddos are adults, and healthy eaters. It all works out!

You’re very wise with the approach concerning tasting foods - ingredients! It’s also how I approach the foods with my own family members! I tell them if you don’t taste one bite, you can’t know how it taste. Nor can you have an interesting or intelligent conversation about foods. Once you taste , you know if it’s a like or dislike, the textures, tastes and how you yourself responds when eating it. Learning how things taste etc provides one the ability to have intellectual conversations with others.

I remember seeing something similar to this with using grated zucchini in cupcakes as well and since zucchini doesn’t have much of a distinct flavor it was an easy way to get more fiber into your diet.

i haz a cuisie hand mixer, too. it was my first real-deal kitchen power tool. it has so much low-end torque that it never fails to jump and twist in my hand when i first fire it up. so i've learned to mash the dry into the wet before ever turning it on! and i've seen alton brown cut a slit and a hole into a paper plate, which he then places around the stems of the beaters and over the bowl so that all the powdery goodness doesn't go flying out when you put the spurs to it. :)

My grandmother makes brownies with sweet potatoes! They're so moist and fluffy and naturally sweet, I prefer them over normal ones bcos it isn't as cloying, and the chocolate flavour is well accompanied with the subtle earthiness of the sweet potato

Hi Emmy, I'm not sure how familiar you are with Soul Food, but these greens are usually turnip greens, collards and mustard greens. Soul Food does not include kale and rarely does it include spinach. 🤣 And the smokiness is from smoked turkey or hamhocks, although I think the canned version are vegan and liquid smoke is used. The acidity is from vinegar. The pepper is red bell pepper.

I'm totally gonna experiment with this & I'm wondering if soaking & rinsing a 2nd time then maybe squeezing in a tea towel might cut the seasoning & moisture farther or if you can get unseasoned greens.
