Plus the dorm is paid by the agency so when they're young, it's a lot cheaper for them (also they can be watched more closely). a few members had already moved out by the time this was shot.

Because all of the formations changed after she left. At 1:00 Yoona goes to the middle because that was her spot before Jessica left. Taeyeon asks "Why isn't there a spot for me?" and only then does Yoona remember she's not supposed to take the center spot anymore. It doesn't matter that Jessica wasn't the lead dancer. All that means is that she didn't get any dance solos. If you watch their old chorography and compare it to how they dance those same songs now their positions are very different. Yeah they do have a lot more song than most others who do random dance play, and they do naturally forget chorography, but no doubt Jessica's absence affected the outcome of this too.
