In this moment I'm learning English and this video is really good for me because I learn a few things in English every day when I remember a noun, verb, phrase or word that I don't forget or strange for me.

Hello teacher, thank you for your enlightening lesson, now this part of the English grammar, which has always been a real burden to me, is much clearer. Just one doubt is still in my mind: In the last sentence, would it be incorrect to say "he hasn't seen BOTH of them for a long time" or using "either" is the most grammatically correct answer in this case? Moreover, I'm struggling on this Harry Potter book's sentence: "Faces appeared at the windows on EITHER side of the street, while a little knot of prosperous-looking passerby gathered their robes about them and broke into gentle trots, keen to vacate the scene." Why didn't the Rowling use BOTH instead of EITHER? Thank you in advance.

No it can't Both exclusively refers to two things. To talk about more than two you would use "all". I'm not a native speaker so you should check somewhere else to be 100% sure.
