I guess thete is a reason why we never see really thick and fluffy english muffin. It ll be raw and crunchy dough ball instead of a muffin.

I had to learn to make these when my oven broke and my landlord took 2 months to fix it. A tip for beginners; use a skillet with a lid to cook these. Do a test muffin first. With these muffins, they will release a lot of steam that gets trapped 8n the covered pan, which can help bake them without burning the bottoms. Also, putting some cornmeal under them as you shape and proof them can help you move them around and give you a beautiful crisp texture. Just brush excess cornmeal off after baking and cooling (if you can wait that long, lol!)

Of course, you CAN make southern-style "hoecakes" more quickly, since there's no yeast or proofing involved. And they're cooked (ideally), in a cast iron skillet on the stove top, over a campfire, etc. If you like, you can dust the outside with cornmeal before cooking.

I feel like it's worth mentioning that BetterHelp's Terms of Service has since been updated and the... how should I say, rather alarming language previously used that caused the whole issue around them a couple years ago has since been rectified. "-also known as a crumpet..." No, definitely not. The two have very different preparation and cooking methods. Crumpets are derived from a batter that is poured onto a skillet utilizing molds. Would love to see this on your channel.

I don’t think she realises the difference which is substantial, basically they are nothing like English Muffins but she said in describing the muffin as sometimes known as crumpets so I don’t think she knows what a crumpet as we know it is.

I LOVE english muffins! When I was a kid my mom would make butterscotch toast which is just a split english muffin slathered with salted butter and then sprinkled with brown sugar and put under a broiler til caramelized! Yum!!

Crumpets and muffins are somewhat different from one another: • Crumpets are always made with milk, but English muffins usually specify buttermilk. • Crumpet batter is just that: a loose batter. English muffins are made from a more firm dough. • Crumpets are made only using baking soda, whereas English muffins are made with yeast or sourdough (and occasionally a little baking soda to help things along). • Crumpets are cooked only on one side, so the bottom is flat and toasted while the top is speckled with holes (delicious, butter-absorbing holes…). English muffins are more bread-like and are toasted on both sides. (This one is actually a definite!) • Crumpets are served whole with the jam and butter spread right on top. English muffins are split before serving.

To me, crumpets are more similar in texture to injera (Ethiopian) but chewier, and muffins are in the direction of yeasted bread, like focaccia, but tender.

DarkWinter8 It’s wonderful! I will warn you that many if not most of the breads require two or even three days to make. He is the father of cold fermentation and uses it a lot. So you have to make the “sponge” and let it rise overnight in the fridge.

They're sold as just "Muffins" here though, calling them "English muffins" does sound really American. I have them all the time. The Cheese and Black Pepper ones you get in Aldi (or Sainsburys) are amazing with butter and marmite.

Lol, I think you are thinking of scones, you generally have those with clotted cream and jam. Sadly we can’t get clotted cream in Australia but you can make it, it’s basically partly dehydrated cream.

"Or crumpets as they're also known as" actually that's a common misconception I've seen Americans have, you think we call muffins crumpets when actually muffins and crumpets are different things. x) Edit : Pikelets on the other hand are basically just thin crumpets ~

@@pepperdayjackpac4521 it's a breakfast bread that you cook in the toaster, it has lots of tiny holes inside it going all the way through, created by carbon dioxide, forming an incredibly fluffy, chewy ocean sponge kind of texture. If you google a picture you'll see lots of holes on the top of a crumpet. Drown it in butter and you'll have a delicious breakfast. English muffins on the other hand are a much stodgier, heavy textured bread. Completely different in every way imo.

Maybe it's just me but crumpets also need a fair bit of toasting until they are crispy, otherwise they're a little too stogey & indigestible. Muffins pretty ok either way. But if done right, for me crumpets win.

Love English Muffins~ Been baking so much bread during this quarantine, so I cannot wait to try this one ^^ Also I have to look up that powdered buttermilk. I avoid recipes that need buttermilk cause other than that one recipe, I won't need it so the rest of the buttermilk ends up going to waste~

I keep that powdered buttermilk in my fridge for recipes at all times for that very purpose got tired of throwing the rest of the quart away as that's the only size I can find around here

Fun baking hack: proof your bread while you shower. Wrap them well and set them on the bathroom counter while you shower. The heat and steam will help the proof quicker.

I used lemon juice in warmed milk and cream to make ricotta the other night! Was a first, for me. Very pleased. :) You are correct, though. Maybe they just want to achieve milk with a soured flavor, to mimic the tang of buttermilk? That's one I don't know the science behind the substitution.

I personally, use white vinegar rather than any kind of citrus juice, as you can use less, for less effect on the flavor of the finished product. But that's strictly a personal choice. What happens, in southern-style hoecakes and biscuits doughs, and pancake batter, is that the acid in the buttermilk, citrus juice, or vinegar, reacts with the baking soda, (or baking powder, as it contains some baking soda), to provide "lift" to the bread, much like yeast does. Of course it doesn't taste exactly the same as yeasted bread, but these items are still very tasty in their on right.

Emmy, you're the only chef, baker, cook, etc., whom I've seen that uses the same whisking technique that I use, i.e., spinning the handle between your palms. It works SO much more quickly on both dry, and soft wet ingredients, (think soup mixes, gravies, etc.). I've never understood why it isn't more widely used?

I do it too especially in a tall, narrow vessel. It also works great to break up egg yolks faster. :)

Not sure where you got crumpets from but they are an entirely different type of bread, very very different to english muffins.

Hi Emmy thank you for sharing a recipe that does not require an oven. My oven broke a while ago and im sad i cant bake my own bread like everyone else but im sure there are more people who like me dont have an oven and i think some interesting recipes for you to try are the two ingredient naan where u just use plain yogurt or sourmilk (also known as maas) in South Africa and flour and also steamed bread also known as ujeke in South Africa. I looove english muffins. I always split them, slather on a hefty amount of butter on them and brown the buttered side on a griddle. They get so golden brown and delicious. Add any flavor fruit jam and 👌🏻👌🏻👌🏻 It's just not the same when you toast them in the toaster and add butter after!

Emmy read the comments below. Also, stu bennett, obviously, you do not know the Nursery Rhyme The Muffin Man which goes back to about 1820. Contradictory to USA "folklore", muffins as we Brits know them, were introduced to the USA by Samuel Bath Thomas an English baker about 135 years ago, a long time after the Nursery Rhyme originated. Griddle buns? That's what my wife calls me... Love to see English muffins (or scone or crumpets) cooked on a griddle. They don't come out right any other way! My favorite way to eat them: fork-split then toasted, THEN buttered. All those lovely crispy toast points...heaven.

Tip... if finishing on the griddle, rather than using a pot lid over them and risking the lid squishing your muffins... use a large pot turned upside down over the top 🙂 It’s also nice to touch the top and bottom into cornmeal before putting on the grill... absorbs the little bit of oil and doesn’t brown/burn so quickly.

I love English muffins! I am for sure going to try these. I have to check what flour I have left, I ran out of AP flour and none of the stores I've been to have had any. Oh just checked what I have; I have pastry, whole wheat flour, AND whole wheat BREAD FLOUR!! I will make due, I think I'm making some bread also. Now I want some fresh warm bread and English muffins!

If you tend to keep your house cooler (as my husband prefers) you can turn your oven on (I just set it 350) for about 10 to 15 seconds (just until you can feel that's it's slightly warm when you put your arm in) and let your dough rise in there.
