For years we've been told that processed and/or cured meats increase our risk of cancer. I decided to delve into the research and the common-sense of this issue and see what I could fine. You will be surprised at how strong one is, and how weak the other.
Nitrates and Nitrite containing salts have been used to cure meats for thousands of years, but only since the 1970's have we been told that these natural ions cause cancer. Can you enjoy your bacon, or should you avoid nitrate/nitrite due to the cancer risk?
It took me a couple months to cut through all of the emotion, blustering, and "expert opinion" on this issue and find out what the research actually shows. If you eat bacon. or other processed meats, you want to watch this video.

I think we are all different and will respond differently to the various foods and (so called foods) we ingest, the reactions or feelings while on these foods is most likely heavily biased by our own ego's need to be correct. It doesn't help to have so many enthusiastic proponents spread across the entire spectrum ... they all seem to think they got 'The Solution'.

@@CalebCWalker As I understand it, the human body does not recognize it has consumed calories of HFCS. This is why a 12 ounce cola used to satisfy, but today's HFCS cola is served in gargantuan sized cups. It is certain that something has changed resulting in nearly an epidemic of obesity. My opinion is that it is HFCS. But, I agree with you that we should limit our sugar intake to an occasional treat.

@@pepperco100 I was taught in Nutrition and Drugs that HFCS will be turned directly to fat before the body decides to use it as a source of energy.

My grandmother on my dads side lived to be 99 and had bacon and eggs every morning of her life beginning when she was a toddler👍🏻 Almost forgot to add that she never had any major illnesses including no issues with cancer.

Thank you soooo much Dr Berry for the research you’ve done on this topic. I was paying double for nitrate/nitrite free bacon, and indeed saw that it actually was processed with “celery” for preserving the meat. I watched this video a few years ago and was so relieved. THANK YOU for taking the time to research and create it. ***UPDATE*** Since then I have seen such massive amounts of marketing against nitrates/nitrites on packaging (and also when you google it) that I started to doubt the "nitrite" safety in particular. I came back to this video and research and you set me straight... reminded me to hold the line. It's all ok. Yay! (My fam is low carb btw, thanks to our son and YOU!). God bless you! Congrats! I love hearing successful stories from living a low carb lifestyle. Even with all the keto friendly foods available I still try to eat as clean as I can. I read some of the keto breads.. it seems as if they add fiber to offset the wheat which tends to be the first ingredient. I’m not a doctor but I have to wonder how your body is supposed to not react to the wheat?

My grandparents lived into their 90s grandpa 99...he ate EVERYTHING! Pork, meat, rice, beans & had a drink or 2 now & then....he just died this year at 99 after he fell while gardening and hit his head 😢.....he told me he eats everything in moderation- but AVOIDS and stays away from SUGAR...

Sugar does seem to be the poison by dose. At least he died in a way that he didn't suffer much if at all (you didn't go into details). That was my Mom's biggest fear (she had polio when she was 6, was in an iron lung) is that she'd be stuck on life support. That didn't happen: she dropped dead of a heart attack while climbing the stairs. Coronary artery disease. Most likely from the long-term intake of sugars combined with transfats (which were supposed to be "healthy") (she died in 99)

Same. My grandpa lived into his late 90's and ate whatever he wanted, and even enjoyed a cigar now and then. He ate whatever he wanted, just not as much as he wanted. He was never fat either.

My parents took in a boarder in the 1950 s and we read in the paper 30ish years later that he was celebrating his 100th birthday.The reporter that did the article on him in paper asked him what got him to his 100th birthday and he said he liked to start the day right with bacon and eggs! He looked much like Winston Churchill and did a lot of walking.He died at 102 yrs and his sister lived to be 105.

I can confirm what you said about the celery salt thing. At the company I work for we blend spices and preservatives for the meat industry. We use a product that is made from celery. It is pure sodium nitrate but because it is made from celery not the chemical version of sodium nitrate it is called NATURAL by the meat industry. This stuff is very expensive too. Far more expensive than regular sodium nitrate. It's always amazing to me what THEY say is unhealthy and what the truth actually is. Thanks for clarifying the cured meat thing. I never stopped eating cure meats but now I will enjoy them with a whole new mind frame! Much the same as I enjoy my butter, lard, coconut oil, olive oil and other healthy NATURAL fats. Go, go keto and carnivore! Keto ended my trip to diabetes land 6 years ago! And I've never looked back. Now I enjoy a more low carb diet but I still do intermittent fasting and switch to Keto for a while as well. I know I could go carnivore but I do not have any autoimmune or hormonal issues and I really enjoy some veggies and an occasional piece of fruit! Love your channel. You are one of a very, very few doctors I trust nowadays!

People on this thread are saying if you cook bacon on high heat the nitrates will turn to nitrosamines and they cause cancer. So, is this true because who cooks bacon at low heat?? You never mentioned nitrosamines. Is it the same??

Back in the day with " heavy salted meat " to prevent spoilage before cooking the meat was soaked then washed in water to remove salt. A good friend of mine made corned beef and invited us to dinner. I explained that I didn't enjoy corned beef. She laughed and showed me a 90 year cookbook. The cookbook showed how to soak and wash the salted meats. The end slow cooked corned beef was delicious ! Not salty at all. Just sayin'.........

You are confusing a statistical risk factor with an anecdotal case. Young children that live and play near busy highways are at greater risk of sustaining a lethal collision with a vehicle than those who do not. You compare the number of deaths after several years and the effect is undeniable. This is why sensible parents don’t allow their children to play near busy roads. If a parent told you-well I know people that have lived on busy roads all their lives, in fact one is the oldest living person on record, so my kids are just fine playing there-you would think they had gone nuts. That’s essentially what you are saying. An increased probability risk of a disease occurring (or rain falling or anything else) does not guarantee that it will happen, it is an estimate of the chance that it will or won’t. Example: Having the BRC-1 gene increases a woman’s risk of developing breast cancer by 65% by middle age. This also means that 35% of BRC-1 gene carriers will not have developed breast cancer. Not having the cancer but having the gene is not proof that BRC-1 is of no consequence. One very old person eating her daily bacon ration tells us nothing about the potential carcinogenic effects of nitrates on populations.

Opinions don't form in a vacuum, neither does the info we receive. If we hear something often enough it becomes "common knowledge". I fell for the low fat craze of twenty years ago as I did "processed foods". Perhaps the smartest thing anyone can do is check multiple sources before condemning any one man. BTW he has many citations listed with which you can begin your research.

Thank you for this great information!! But aside from the nitrites and nitrates, I am concerned about the added sugar, corn syrup, msg, and other chemicals I don't need! This definitely helps me with my love for bacon!! Thank you so much for helping to introduce me to the Carnivore way of eating!! At 71, it has given me my life back! Little pain now, and much more energy! Very little anxiety and depression!! No longer type 2 diabetic!! Off 7 of my 11 long term meds, and reducing some of the others!! Dr Berry, I am from Trinidad and Tobago and for more than 30 years now their was a doctor by the name of Lionel Gaskin Mayers and he preached all this stuff on a local TV program about how coconut oil is so good for you, this is when the world was now learning about cholesterol... This info is so helpful. I’ve started avoiding all the good stuff, as you mentioned. I’ve missed occasional bacon, bologna and other processed meats. I have thought about my grandmother and all her brothers and sisters, whom ate everything fried. All the smoked meats they prepared on their farm, and all lived into their late 90’s. I’m so glad you cleared up this myth, and that’s what it was. Thank you for your expertise and sharing this great news.

The difference is your family was smoking their own meats and not store bought processed meat. I doubt they were injecting more than 10 preservatives into it. The meats that contain nitrates usually also include dozens of other preservatives.

Nah. This doctor is a paid actor. The entire meat industry is very large. A group of small researchers that work on linking colon cancer and processed meat could be easily squashed by powerful corporations. Back in the days, corporations used doctors in lab coats to market cigarettes and Coca-Cola.

So this video is very helpful, but it left out any important finding. From the University of Wisconsin: "if high levels of nitrite exist in foods that are high in protein and are exposed to high temperature (>300°F) cooking, such as bacon frying, very small amounts (parts per billion) of nitrosamines (compounds classified as a carcinogen) could be formed." In other words, it's not the nitrite, but it's the combination of nitrites + protein + high temperature that can pose a small risk. Bacon tends to fry at around 400°F, so the act of cooking bacon can create a carcinogen known at nitrosamines.

That's part of the high fat, low carb diet. Makes sense, but nothing to do with nitrates. Not all bacon is infused with nitrates, but perhaps in the US, it is.

Bacon, eggs, avocado have been on my menu since July. I also now feed on an 18/6 hour cycle. I lost over 25lbs since mid-July. My body is starting to look like Michael Jordan’s. My resting BP is normal for the first time in my adult life. Thanks to Dr. Berry. 👍🏻

Great. @@doglifehub Very well, thanks.I have defeated my carb cravings by keeping them low. I drank one soda in the last year. No ice cream or candy bars, either. I weighed in at 215 last week, at 6’2. I haven’t been at that weight for 35 years. Bratwurst, sauerkraut, and Brie is on the menu tonight. Dr. Berg says it clears your arteries.

@@doglifehub Good luck. For me, it took about a month or two until I realized I no longer craved sweets or high carb food. I go for around 80% calories from fat and 20% or less from carbs. Avoid tropical fruit, low fat dairy, bread, potatoes, rice, pasta and whole grains.

It doesn't necessarily make one a hypocrite to give someone facts and then make a choice to not utilize that advice from those facts in their own life. That assumes that doctors are supposed to be the picture/standard of health themselves, when all they're obligated to do is provide factual advice and proper care to patients. It certainly isn't helping their advice pitch to patients when they themselves aren't walking the talk, I'll admit. But they are merely the messengers, not the models.

I was so excited when I seen the title of this video! I have pulmonary hypertension and my Dr actually is one of the researchers working with the nitrate issue. He told me to make sure I buy processed meat if I am going to have a sandwich. To hear Dr Berry say basicly what my Dr says just makes me happy!

The problem is with the garbage that they are feeding the chickens and pigs, etc. You are what you eat and you are the food that your food also ate. Grass-fed is the way to go.

What about the concept that when cooked in high heat nitrites coupled with amino acids in protein turn into nitrosamines, which is supposedly what actually leads to the "carcinogenic"effect of nitrates and nitrites. I'm surprised nitrosamines weren't mentioned in this video.

When I was in college I took a rhetoric class and did my paper on nitrates in bacon. 8 was supposed to analyze the rhetoric of both sides of the issue. I knew then the cancer scare was bogus.

I've heard that it's not the nitrates themselves, but it's the cooking process that turns nitrates into a carcinogenic compound called nitrosamines. What are your thoughts on this? Is it true or is it bologna (no pun intended)?

When 35 I immigrated to US. Immediately reacted to those fake colored cherries and to nitrates. No cooked but in vine or coconut water. I neglected to read the ingredients in coco H2O and after 7 minutes I looked as a drunk alcoholic nose and cheeks red beet. I do not drink,no smoke no coffee. But back in my country I ate salami,ham . Bacon preserved with nitrates. I suspect that either they put too much and lie or the way they manufacture the nitrates here is poisonous

It's not even the cooking: it's that the nitrates combine in the stomach with the amino acids, creating nitrosamines, which are - allegedly - toxic. Some advise to eat vitamin C, or lemon juice, or Ascorbic Acid with food containing nitrates, because that would prevent the formation of nitrosamines.

A lot of vegetables have nitrates also and form nitrosamines also. Not a single thing mentioned about the veggies and that they are carcinogenic…only the processed meats. So I find it’s all bs in general. Why demonize meats but not the vegetables?

True fact, I was listening to a live call with Dr. Joel Wallach where he announced that we should stop eating celery because of all the nitrates it contains. That is where I got off the Dr. Wallach bus. His stuff is good and his books are interesting but that last bit about celery was just too much. Thanks for this good and comprehensive report.

I worked as a surgical assistant for many years and remember a lot of the surgeons saying things like “this patient wouldn’t be here right now if they had just done this or that differently”. But of course they would never tell that to the patient because, well, surgeons gotta surgeon! Dr. Berry on the other hand is literally giving information that is spot on accurate without regard of losing potential business. He is doing exactly what doctors should be doing by helping the patient achieve a better and healthier life. You’re definitely putting jewels in your crown if you believe in that sort of thing Dr. Berry. I know I do and I’m very appreciative of all the no nonsense, common sense information I have extracted from your videos. Thank you!

I don't love cold cuts, but they're a convenience that I've avoided for years and felt guilty when giving them in my kids lunches now and then. I'm so sick of the misinformation in the nutrition world that cause us to bend over backwards trying to do the right thing, and yet, cereals get the seal of approval. SMH.

Where do you find hot dogs or any processed meat that does not have some kind of sugar in it. I have only been able to find one kind of bacon without sugar. Oscar Myer has one with out sugar. Even the bacon at the Farmers Market and from local farms process their bacon with sugar. Nitrates too. I have not been able to find any hot dogs or any lunch meat that is not processed with some form of sugar.

LindyTN - just remember, the carb count on hot dogs or meats with sugar is still extremely low. I would say they use a "touch" of sugar for taste, but it is not overwhelming. The safest way to avoid sugars in food is to eat it naturally like a whole chicken piece or steak. You can slice them thin to mimick lunchmeat.

This video was published 5 years ago and only now are we starting to get some some traction on a national scale. Finally we are starting to take this advice to heart and figure out how essential nitrates are to the human diet. Nice job of being a bit ahead of the main crowd Dr. Berry! (PS I'm a PhD biochemist but got my degree nearly 30 years before the 1998 Noble prize in medicine was awarded for the discovery that endothelial signalling factor was indeed nitric oxide -- so I was as late to the party as anyone! Shame on me!) We need to be taking on higher loads of inorganic nitrates in our diet especially as we age not LESS!
