I live in NY and my first experience with jerk was from my Haitian brother in law. I wasn’t a fan. Wet and too hot for me. Not spicy but hot. I then tried a spot called Yardies. Again, too hot. I could not enjoy it. Then I made it Jamaica for a destination wedding and got me some street food when we went out to a club a couple hours out of Montego Bay. I fell in love. Made for my palette. Spicy, not hot. I don’t have a Jamaicans tolerance for heat. I have found some authentic spots in NY now as I now know what to look for and what true jerk smells like. But I can’t wait to return to Jamaica. Sit around and watch a master do their thing. Love your work Ibby. Keep it up fam.
