Good morning YE ADANE INNAT My wife and I have been watching your videos for a while. We have learned so many ways of making different kinds of ETHIOPIAN dishes. Our focus is on "injera", we find that to be challenging. We watched you making injera with passion and with perfection. We followed your instructions.We have done well. However, we have some problems to bring to your attention to get your advice: 1. Our injeras are not smooth on their BACKS.How can we bake injeras with SMOOTH BACK ? 2. Our injeras break on us badly. What should we do to make our injeras stronger? Please send us your advice that will help to resolve our major problems. By the way, we mixed two measures of " teff" and one measure of "gebs" . By watching your videos, we have to conclude that you are passionate in what you do and teach your audience in easy ways to follow.

Hi Seraj Muhammed first of all thank u for the nice comment, to answer ur question American injera (injera made in America aren't that smooth compared to Ethiopian made injera) but here are the possible solutions 1. Don't over heat the Mitad ( mitadu betam aysma) if the Mitad is the problem it's better to change it, another one is put little more absit I don't know the English term for that 😊 ( absit kelelaw gize tinish berket yibel) and most importantly mix the batter very well (litu bedenb metashet alebet) 2. Its similar with the above answer mix the batter very well and add little more absit and when u guys make the absit put little abish on the absit batter) hope it helps..credit to Mom she answered all this thanks again
