How are you getting it to change instuments on the fly, without pressing anything? or is your left hand off screen doing it?

Top suggestions from other videos are either that he's using a pedal to switch, keyboard with left hand, or the most boring: it's not live and just playing the keyboard over an already recorded track.

And what happens when the song changes into another tone?. I think this only is usefull while no change of tone is ongoing. Isn't it?

No, of course you can switch tone with the push of a button. you just set one of your pads at the top to switch tone, you could have different tone presets, so you just tap the pad and it switches tone, you can even set one half of the keyboard to a completely different tone than the other half. Unlimited possibilities with midi controller keyboards.
