Actually there’s a couple other times his name was mentioned Like when he fought macaque when he said “cmon show me the real sun wukong” And when mk was fighting DBK at the end of season 1 DBK mistook MK for wukong

I think it's a respect thing,so the only ones that calls him by his name are demons,people that knows him since the beginning and deities.Meanwhile Mr.Tang isn't really close to him but respects him a lot so he calls him "Great Sage" (Dasheng)

Well, not 1000 times over, "just" 5 times over (taoist teachings, erased his name from death's ledger, ate the peaches of immortality, drank wine of immortality and ate the pills of immortality). But even so, that doesn't make him omnipotent. He can't swim, can still feel pain to a certain extend, can't handle gimmicks very well even if strenght wise he's superior, can still be knocked out, immobilized, impaired in one way or another (like temporarily blinded) and requires the aid of other celestial beings with their own gimmicks that are direct counters to those he had trouble with previously. So yeah, even in the book Sun Wukong isn't capable of easily steamrolling through every obstacle barring his path
