Being from the small Italian region where Pasta alla Norcina comes from, I'm really happy for the indirect shout out. Babish's version is really interesting, but it'd be even better with mushrooms added to the cream and sausage sauce and maybe with parmigiano instead of pecorino (that much pecorino can be really overpowering flavour-wise and can mess up the dish in terms of salt).

it's kinda sad how we all live in the routine of the weekend where Sundays are normally our days to get back into the flow of normality that we have to endure during the week
