Detailed steps-by-steps and everything you need to know and take note while making Five Spice Meat Roll 五香肉卷 at home.
Ingredients:
1 big bean curd sheet (non-salty type, cut into 8 small pieces)
450g of minced pork
4-5 water chestnuts (chopped)
2 tablespoons of chopped garlic
2 tablespoons of chopped carrot
2 tablespoons of chopped fresh coriander
2 tablespoons of chopped shallot
1 teaspoon of chopped ginger
1 teaspoon of five spice powder
A small bowl of corn-starch water
Seasonings:
1-2 tablespoons of oyster sauce
1 teaspoon of Ah Pa’s homemade chicken powder
Enough amount of fried garlic oil (or sesame oil)
2 tablespoons of light soy sauce
Few drops of Ong Ky premium fish sauce
Few dashes of white pepper
1 cap of Shao Hsing cooking wine
Pinch of salt
Pinch of sugar
1 chicken egg
Enough amount of corn-starch

Ah Pa: Sir, Thank you for the recipe of cooking Kikiam that it is called 5 spice meat. In the Philippines they use an innard from a cow like a lace to wrap the meat like a sausage, but now I learn topu sheets could be use . Sir,thank you again and have a good day.

The most authentic way in china is using fat webs from pig to wrap the meat. But more commonly to use beancurd sheets nowadays.

Gong xi fa cai. I'm so excited to try this tomorrow on Canada. The tofu sheet I bought from supermarket feel very dry and hard. Should I dip into water to soften them?

If it’s dry and hard, then it’s different type, not suitable to wrap.
