Apple doesn't support third party repair so you really think they would make a device for 3rd parties to repair their devices and then sell those devices? Most of the devices I know about come from a company called rewaa

Amazes me that no testing of the motherboard after replacing the NAND chip was done. Imagine putting all that back together and it doesn't work! Amazing to watch this video but there's some serious equipment there required to do this.

Since there is no software installed, you can't really test the motherboard until you flash it. After that testing is literally turning on the phone and checking if everything works. Also iphone's lego style connectors are really sturdy. Usually there is no problem with the conncetion, so it doesn't make sense to develop an usb debugging program just for this scenario.

Agreed, this Jerry rigged upgrade isn't a wise decision. I rather spend the extra money to do it right from the manufacturer than do it like this then have something go wrong with it later on.

This is just a demonstration of what's possible in terms of iPhone storage uprages. It is a thing and it surely pays off - just look at all that equipment! People who resolve to such measures are probably the ones who keep their phone for more than two years and find themselves in need of more storage down the road; intend to sell it on the used market for a little profit (no one has to know it's been upgraded in such way) or in the worst case have their NAND chip malfunction.
