I tend to watch/listen to these videos while I do chores around the house and today I decided to have a soda while folding laundry and the Mel Gibson joke got me especially that delivery. Almost spat out my soda all over the clean clothes lol thankfully I was able to turn my head. Great video, guys. I love spontaneously fermented beers. They're beautiful. (I also know the heartache of buying some corked lambics and being like "oh yeah... Where's the corkscrew?")

Great video chaps! Discovered Mills in the House of Trembling Madness in York a few years back. Had a few of their bottles since then, all of which have been stunning.

Great sign off, "Here's to beer that tastes like where it's from!" Great to hear about beer that embraces its local character and flavour. Beer doesn't have to be identical clones of a particular style - there's something exciting about opening something unique that tells you a story about where it's from or how it's made.

Have you guys been following Crossover Blendery in Hertfordshire? I have just got a bottle of their “Skimming Stone” which has plums in. I don’t know whether to drink or age... 🤪

Van Dieman Brewing based in Tasmania, Australia do a great 3 year blend, as well as fruited spontaneous blends. All home grown malted barley/wheat, hops and fruit.

The Referend Bier Blendery in my hometown in New Jersey consistently churns out stellar spontaneously fermented brews!! Definitely a must grab if you ever see any while in the States!

That Today when fresh was just divine. Can't wait to try the second bottle! Loving what the UK has been putting out in terms of mixed fermentation / wild beers.

Great vid as always guys, thanks. I'm a homebrewer obsessed with Belgian beers amongst the many. Love lambic as a style, as appreciate the complexity it brings. Now I know there are some good examples in the UK, great :)

Loved this. Would be great to see a video on the new wave of wild breweries - LEP, crossover, evensong,holy goat..etc maybe even deya’s sour output too? Gotta love Mills but videos like this will just make it harder to get bottles!

I bloody love learning about Lambic/Spontaneous brewing! Got to be the most exciting style of beer (IMO) so much so I've welded up a 40L Stainless Steel coolship that I'm going to do some home brew batches and leave out overnight at my cousins farm under trees, near bee hives etc and see what those little bacteria/yeast cells come up with! (Based in Aus so going into cooler night's now)

These beers indeed don't taste exactly like PaYottenland lambic, but that does not take any merit away from them. As you said, they taste as from their terroir. A word I missed in both lambic videos is "mals", which roughly translates to mild, even when its original meaning is 'tender'. That is what lambicbrewers and gueuzeblenders are aiming at, whilst a lot of foreign spontaneous beers - especially those from the USA and Scandinavia tend to go outright for hard acidity. Having said that, I had great spontaneous beers from Eire, Czechia, and the UK - including MIlls, which are really great in what they do.

what about naming Lambic's that aren't from the Lambic region feroce piscine style? Got a nice ring to it and won't piss off the lambic brewers.

Look up Land and Labour (a side project of the head brewer at Galway Bay) if you cant - their first three year blend is nearly out!

I was wondering where Wild Beer Co was in all this, but as the video was about to end, lo and behold: An image with Wild Beer Co where Johnny is quaffing a Coolship 2020. And also having some troubles with opening the bottle, so nothing new about that ;)

Since the wort looks a bit purple around it, I'm guessing there's fruit in the bags! Though Johnny did say it smelled floral so maybe it's hibiscus or something. I'm thinking it would be a good way to introduce some native yeasts and bacteria to the wort.

I know it's not exactly accurate, but there's a beer merchant in my area that colloquially call "british lambics" Old Ales. Thoughts?

Haha well yeah historically he is right that old ale would have been mixed ferm but lambic is a VERY different brewing process to how those old ales would have been made

I absolutely adored that Mills. My favourite beer I’ve had from them. Their corks are notoriously bad though!
