肥媽 Maria Cordero KZfaq - September 25, 2020 Recipe English Version Braised Pork Belly with Coco-Cola and Ginger Ingredients: Pork belly - 2kg (wash with cooking wine and vinegar, rinse well, pat dry and cut into chunks) Chinese brown sugar - a small piece because coco-cola has sugar as well (this will tenderize the meat further) Ginger slices - a lot (the more the better) Shallots - 2 bulbs Green onion - 1 bunch (tied for easy discard later) Seasonings: Coco-Cola - 1 can 355ml White vinegar - 1 tbsp (this is to release the fat from the meat) Salt - 1 tsp Shaoxing wine - 2 tbsp Light soya sauce - 2 tbsp Dark soya sauce - 2 tbsp Methods: 1. In a large stewing pot, add in pork belly pieces, Chinese brown sugar, ginger slices, shallots, a bunch of green onion, a can of coco-cola, salt, Shaoxing wine, light soya sauce, and dark soya sauce. Close lid and bring to a boil. 2. MUST bring to a boil on HIGH heat for 2 - 3 minutes then reduce to LOW heat and cook for about 30 - 45 minutes but no more than 1 hour. Poke meat to check for doneness and tenderness after about 30 minutes, if not, then continue cooking. If they are done, then reduce liquid. Serve.
