Belgian fries are thin cut and cooked in oil, French fries are thin cut and cooked in duck or goose fat. What people commonly call French fries are actually Belgian, not French. Crisps or potato chips are different again and are circular and cut an a different angle again. There are proper names for the way they are cut and cooked. Now stop talking out of your rectum.

In Belgium (the home of fries after all) we use two different oils for frying. 2nd fry always in something similar to beef fat, "ossewit". Highly recommend it :)

If your chips fall apart after parboiling, add vinegar to the boiling water. It chemically prevents the potato from breaking down, but also prevents crisping, so you would add baking soda to the spice mix if you were cooking them in an oven ("""air fryer""").

Yes absolutely. You can freeze and store them for weeks and few months

That's the best way to do it imo. Lasts months in the freezer and you can pull them and fry them up whenever. Be careful to seal them tight because potatoes absorb a lot of smells and flavors around them when left alone. They're prone to freezer burn.

Yes, in fact freezing after the first fry and frying from frozen for the second is ideal since it results in a better fluffy interior. Also adding a splash of vinegar to the boiling water will help prevent them from breaking apart.
