Do you incorporate air into your bean after blending??? If not try whisking your bean till it becomes fluffy before frying

Make sure there's enough oil when you fry

It need to be mixed/blended a lot to incorporate more air into the batter so that it can be fluffy.

It’s either you add too much water, your akara blend is not smooth or you don’t whisk it well with a turning stick, whisk or mixer to incorporate enough air in it
