Join us this week on our small farm as it's finally time to get into the fields and plant! We're so excited! Join me as I'm living out this "farm wife life" making homemade meals for my husband in the field, caring for our growing kids and soaking up these summer routines!

RECIPES:
Homemade sandwich bread:
2 cups warm water
4 tsp yeast
1/2 cup melted butter
1/4 cup sugar (or honey)
2-3 tsp. salt
6 cups all purpose flour (or bread flour)
Mix water, yeast and sugar - allow to sit for 10 min or so. In a stand mixer with a dough hook attachment add the flour, yeast mixture and butter. Mix together and knead for 10 minutes. Allow to rest and rise for 1 hour. Punch down the dough, shape into two loaves and place in well greased pans. Rise another hour covered. Brush with egg white and bake at 350 for about 40 minutes (ovens may vary).
*For the cinnamon/sugar variation I simply shape the dough into a small rectangle and sprinkle with cinnamon and about 1/2 cup brown sugar. Gently roll the loaf up and place into the pan to rise.
Homemade Mayo:
1 egg yolk, room temperature
1 cup avocado oil
1 tsp. lemon juice
1 tsp. vinegar
1/2 tsp salt
1 tsp. dijon mustard
Carefully place the egg yolk in the bottom of a wide mouth mason jar (do no break the yolk). Add the lemon juice, vinegar, salt, and dijon. Carefully pour over the oil. Place an immersion blender wand directly over the yolk and blend for 10-15 seconds holding in place. Once you see the bottom of the jar beginning to look white like mayo, slowly work your immersion blender up the sides of the jar to incorporate the rest of the oil into your mayo. Enjoy! I store my homemade mayo in the fridge for a week.
Cucumbers & Onions (Refrigerator Pickles):
3-4 Cucumbers, peeled and sliced
1 Medium Onion
2 cups sugar
2 cups vinegar
2 tsp salt
Combine the sugar, vinegar and salt and stir until sugar is dissolved. Layer in a large bowl cucumbers and onions. Pour the brine over the cucumber mixture and allow to set in the refrigerator for at least 48 hours.

We make the same cucumber recipe! We also add a tsp of celery seed! SO GOOD!

Cucumbers and sliced onions are also *delicious* with sour cream and fresh dill! I eaten this "salad" since I was a wee lassie!

I enjoy watching your videos right before bed. How I wish I was your neighbor to get some cucumbers. My daughter loves them and eats one per day so we are always buying them! Definitely going to try the cucumber onion recipe. 😊

Your bread looks great! But you’re not alone in the bread department. My teen daughter prefers homemade bread, the younger two prefer store bought - you can’t please everyone all of the time I guess 😂

I just started sourdough this year. My 6 year old doesn’t like my bread but my 2 year old likes mommy’s bread. So I’m right there with you 😂

I keep experimenting with sandwich bread recipes; and haven't found one yet that is just right. Still a little too heavy or dense. I am not a farmers wife; life didn't take us in that direction. I was raised on a small homestead with animals, chickens and huge garden. Retired now; but like a simple life, cooking and baking; being in the mountains.

Im a farm wife! My husband, and i, along with our youngest son all farm together It has been so rainy here this year as well. Today we are finally cutting our first hay down. Its so wet underneath but at least its a windy day...so that will help. I just love your videos and that you always have a good attitude! That was not always the case with me through the years and i regret that. With all the hard work every day, its easy to forget what a blessing this is! You have helped to remind me of that....THANK YOU!

Love your farm family life Lauren, thank you for sharing! I'm intrigued by your homemade mayonnaise each time you show us because the egg yolk is left raw. I'm assuming it is safe and maybe 'pastureized' by the vinegar? Maybe others are curious about this too and you can touch on this when you talk about your homemade mayonnaise again in the future. The egg “cooks” with the warmth of the blender, or so I have been told. Homemade mayo is so yummy! Plus you eat raw egg if you like to sneak cookie dough while making them. Sooooooo there’s that.

Thank you so much! There are many opinions on the internet about raw eggs, lol! I think the only "safe" egg is a pasteurized egg (BUT this does not necessarily include all store-bought eggs if understand correctly). I choose my freshest eggs for my mayo and I know the health of my own pasture raised chickens so I'm comfortable with it. I will say I've also read that the acid in the vinegar and the lemon juice help to kill any present bacteria in the yolk. Definitely encourage you to do your own research and make that decision for yourself but it works well for us and it's delicious with simple, healthy ingredients. I totally understand about the bread! I have 4 boys, I like to make sourdough for the gut benefits (and my husband and I love it) and they just aren't having it. I even found a very mild sandwich bread sourdough recipe and nope! They want store bread only... 😂 Same thing with milk, we purchase raw milk, they want store 2% milk. I can't win 😵‍💫

Maybe you can help my family with this question since you run a farm. When we drove through Missouri and other farming states, all we saw were soy bean and corn fields. Why do so many American farms grow these crops and not the vegetables that are better for us to eat? I believe we have to rely on other countries for that.

I think that is a great question and I’ll do my best to answer (although I won’t claim to be an ag expert!) In short, soybean production is largely used in the production of animal feed here in the states. It’s a good source of protein. Also, the US exports a lot of soybeans. Soybeans are used in a lot of different products too (just Google all that they’re used for and I’ll bet you’ll be surprised). To answer your question about vegetables we consume, I did a search to see where green beans are grown and was surprised to find that the US actually grows 60% of the worlds crop! That’s still a huge chunk of veggies! I enjoyed your question and it makes me want to continue to learn more about American agriculture too!

We farm also and grow corn, soybeans and alfalfa. All our crops are used to feed our animals. However, about 30 minutes so from me is a Delmonte plant. They grow a lot of sweet corn and beans in that area for crops and also a lot of potatoes in our area. Probably a lot of thw soybeans you are seeing are for animal consumption.
