The answer is complicated. Mimír mentions that giants can die of "old age", in a sense, by telling a story of a giant who fathered a lot of their kind and died thereafter. There's also a song called "The Lullaby of the Giants." in which it's lyrics you may find the translation from old icelandic of the phrase "Jøtnar, not mortal neither god." They are in between, they may live for long but, not forever.Or some of them might rise to immortality.

From Ragnarok we learn many things about Faye and her motives. We learn that she was the one who tried to destroy the mural depicting the story of Loki. She didn't like the idea of people being bound to fate. Her people kicked her out of their realm for doing this. She went on to the dwarves and tried to start a rebellion but ultimately failed, resulting in the dwarves being under heavier subjugation from Asgard. She tried to kill Thor when she fought him in Vanaheim, but she couldn't defeat him even while he was drunk out of his mind. She fled and hid in Midgard, trying to come up with her next plan. This is when she ran into Kratos and this is when she realized that the fate she was trying to break was coming true. She wanted to be a warrior who would defeat Asgard and save the day, but she was realizing that the only purpose she was supposed to have was to be the mother of Loki. So, for the sake of all the realms, she married Kratos and gave him a son. For about a decade she faked being happy and hopeful so that Loki would have an attitude of optimism and kindness; being married to Kratos was dreadful because he was always sad and never had any chemistry with her. No matter how much she would tease him and joke around with him, he remained a boring plank of wood who only married her because he was desperate for some kind of warmth and companionship. Once Loki hit a certain age, Faye remembered that his story began with the death of his mother. So, seeing how miserable she was in her current situation but also understanding her role in taking down Asgard, she consumed a ludicrous amount of poisonous plants and died. She was free from being bound to Kratos, but now Loki would start his journey as the one to defeat Asgard.

It would have been better if they never showed us what Faye looked like. There was a powerful angelic sense of ambiguity in the 2018 game with how we never saw her but only heard about her great deeds and how much other people respected her. It let the player decide what she looked like, and it made things better that way.
