Biryani is a comfort dish that is loved by all. While we can go on about its origins and ingredients, this video is not about traditional biryani, it’s about the three hidden spots in the city that serve their tasty version of the South Asian specialty.
Chef Martin and Nica are learning more about the dish as they taste three very different plates of biryani from Why Chicken in Pasig, The Biryani Story in Manila, and Mapishi in Quezon City.
LOCATIONS:
Why Chicken - 451 Eulogio Amang Rodriguez Ave, Pasig
The Biryani Story - 2139 URC Building, España Blvd, Sampaloc, Manila
Mapishi - 9 Shorthorn Street Project 8, Quezon City

One thing as a Indian filipino who was raised in the middle east there no such thing as lebanese biryani in the middle east, their rice dishes are called Machboos. The swahili guy got it wrong it was introduced to swahili region from indian traders where many till now lived for generations not by persians. Interestingly this dish is a mix from different influences from surrounding regions, the name is of Iranian origin called beryani since persian was the lingua franca in india during the medieval time which means to roast where a fatty liver is kept on top of a large flat bread where it soaks the fat. The Biryani rice dish is indian of origin the dish originates most probably around the central India is the only rice dish that does the layering techniques then at the end mix it . Btw indians and pakistanis back home dont like the term "south asia" since it generalizes how extremely diverse it is, much prefer to be specific that the country its from. India alone has 100s of types of biryani especially how big it is. If theres 2 types of biryani you must try which the video doesnt show sadly despite knowing one in Manila its Hyderabadi biryani (You can find in manila) and Thaleserry biryani ( Available in Kerala,India and the middle east).

My mama works in Pasig Hospital and way back in 2023 (literally when their takeout boxes were still basic and didn't have their logos) one of her coworkers recommended this to her, she started to buy this as pasalubong for us cause she really enjoyed it and wanted us to try too (we live in quezon). And every friday since then till now she brings it home. We love this resto honestly it is one of the best biryani yes! So happy they opened another branch in Quezon!!!

I think it will take time to many Filipinos to adapt to briyani easily. But i can see a big potential once a Filipino started to learn eating it. At first, I was not a big fan of briyani but when me and my firends kept going to the same indian shop where we used to eat, i did not notice, i am becoming a briyani patron!❤️🥰

The best biryani I've had in Metro Manila was at New Bombay in Greenbelt. I ate some of the best Pakistani and Indian biryanis in the UK (a big centre for the overseas Desi community), and New Bombay's biryani is right up there. As my father's side are Muslim, and our local mosque in the UK had mostly Pakistanis, I grew up with them as a diasporic half-Filipino eating their families' homemade biryanis, saalans, karahis, niharis and rasmalais. The thing I got with New Bombay is that their's wasn't tailored just to suit local tastes, but is there to introduce Filipinos (Bangsamoros excluded since they/we know this) to the richness of Indian subcontinental cuisine. Just make sure to say 'authentic spice level' to get the real heat. I'll give these places a try, but my standards are literally up there. And another thing: there is no 'Arab biryani' - their tradtiional rice is called kabsa or makbus/machbus - they also have a smokey type of rice known as mandi (from Yemen). I can cook a mean machboos too, but the spices they use are completely different. I'd say a kabsa/machbus is less 'foreign' to Filipino pallates, since there's no chilli, its slightly citrus-y thanks to the dried limes, and the spices used (called 'baharat') are more for a 'flowery/all-spice' aroma, than a heavier masala based profile.

Sa abroad, biryani is the go to food ng mga nagugutom na pinoy. Unang una, kasi mura tapos madami. kadalasan, unli biryani rice pa. at the price point na 12 Riyals, mura siya. KAsi ang usual food price dito na hindi indian restaurant eh mag rarange ng 15 to 30 Riyals.

Indian food is my most favorite cuisine after living in SG for 13 years now. I am so into finding the best briyani in town. I have tasted a variety of it. The 2nd and 3rd briyani shop look very close to the authentic briyani. The stronger the taste, the spicier it becomes, the more delicious it becomes. But i think the spicy version is more authentic.

Biryani is like indian/pakistani/bangladesh counterpart paella. They are blesses with real spices na hinde (naka tetra packed) kilo kilo nila iniimport ang spices kaya mura sa restaurant. That spices are one of reasons why west colonized INDIA. Personally, I prefer the northern indian & Pakistani biryani kase maeenjoy mo meat & rice & swabe lang ang aromatics . S. Indian kase is spices na may rice and onting protein.

I agree na kaya maka adapt ng pinoy sa biryani taste. It's just that hindi pa talag ganun ka accesible yung mga spices sa mga local palengke natin to make a good biryani. Kung meron lang mga area sa palengke na parang gilingan ng spices malamang dumami at maging nasa level din ng street foods sa atin yan. Why chicken is really the gateway, coz its affordable and biryani story really focuses on the biryani. Mapishi is the risk taker as it is different approact to the biryani.

Interesting how Biryani comes in so many styles - Swahili, Pakistani, Indian, Persian. And now these chef/restaurant owners are introducing it to the Filipino palate.

Their biryani rice is eerily similar to Arabic Bukhari (kabsa) rice paired with chicken cooked that way in a rotisserie oven. I miss it so much but there are only a few restos serving kabsa in the Phil.

Another good biryani is the Bangladeshi stall in the food court of 999 mall in Divisoria. Must try their chicken korma too (available on weekends only).
