Glad it was helpful! Btw, did you know you can ferment and then freeze fermented avocados? I'll create a video all about how to safely freeze "some" fermented foods and why you might choose to do so in the coming months as clearly there needs to be more educational videos on the subject of fermenting.

I love all your fermented recipes. I have been trying to eat this way for a little over a year and I really believe it has made a huge impact on my health. I have made fermented avocados from one of your past videos. I would like to ask how to keep my avocados from browning on top? I absolutely love fermented avocados, but mine always seem to start to brown just on the surface that gets oxygen. Thank you and I really look forward to more videos!

To prevent your fermented avocados from browning, either add 1/4 cup of fresh squeezed lemon or lime or lemon-lime juice directly into your ferment or cover the top surface of your ferment in fresh lemon or lime or lemon-lime juice. Works every time! Btw, I'm truly delighted to hear your new way of eating is having such a positive effect on your health. Your greatest wealth is in your health. 💚

Will be giving this a try as I love avocado anything. Have mainly used is as mayonnaise but this will make veggies have a nice flavor, thanks!

I use fermented way or kefir water to ferment my fruits or vegetables. Amazing I can tell you :) I have not tried this recipe and am going to do it just right now :)

I see this vid's from 2018, so I wonder if all your lost videos showed up, finally;0) Your vid's loaded with great tips and ideas and I'll play today with all of them since I was given like 30 avocados. They are smaller, but they're all ripe, so know that you've saved the day, so to speak:). Reading through comments, it was mentioned that the seeds could be used for tea-hmm? Then, you responded with the mention that the seeds could be ground to a powder that's rich in B vitamins! Hehehe, gosh, I love this:) I have some dried-out seeds and now, boodles of fresh ones, so I'll be checking if you have a video on this idea. Thanks so much with great appreciation:)

I am so glad I found your channel. I wanted to know how to preserve food without refrigeration, and saw you doing ferments. Classic age old method that I never knew about. Anywho, what type of feta cheese do you use? I heard you say in another video that because of your sensitivity, you never get it in the plastic container. Do you make your own? Also, did you know a tea can be made from the seeds of the avocado...amongst many other uses. Who knew? I love this way of preserving avocado, and gonna do it right now. Thank you so much for your time in sharing your knowledge.

I've never found store bought feta cheese in a glass vessel and have not yet made my own. That said, the first thing I do whenever I buy store bought feta cheese is transfer it to glass jars. Perfecting the art of cheese making is my next BIG challenge. Re: avocado seeds. Yes I have. You can even grind the seed into a powder & add it to any recipe. Rich in B vitamins.

Love your channel, such a great source of inspiration and thanks to your recipes I can go back to eat vegetables I love but which I skipped since I have started eating keto. Made fermented organic Avocados as they were on sale a few weeks ago. Was not sure whether I would like them but I got obsessed with them as part of my salad dressing. I mix some of the fermented Avocados with Tamari, Sesame oil, cooking Sake, water and some low carb sweetener and it is just so jummy…. After watching some of your videos I started stocking up on ferments and 'got creative', hope they will taste great;-)

I get what you're saying; fermented foods were a main staple for me too while on a Ketogenic diet. Glad you're enjoying the recipes. Btw, your fermented avocado with tamari, sesame oil, cooking sake & sugar substitute sounds yummy!!

I just brought avocados two days back and it's already riping. My refrigerator stopped working in time, it's lock down here and I can't fix it up either. I never know how to use avocados before it starts spoiling.. I started eating avocados for my dry damaged skin to improve. I just wanted to know if I could preserve it atleast for 10 days with same nutrtion value. Almost saw 100's of videos which asked to keep in refrigerator immediately. Just found your video and I am super thrilled. Do you have any suggestions to add. Can I eat before fermenting too ?. I mean I couple of days ?. And can I have it out for 10 days without fridge. I am sure I will empty it before it . Any suggestion you can add please 🤗

Truly sorry for the tardy response. Been in a bit of self-imposed lockdown myself. Funny how something like Covid could make my videos so valuable to some. Thanks for sharing your story. I greatly appreciate it. I'm also very happy to hear this video brought you peace of mind. I've left fermented avocadoes out for 6 months before. Perfectly edible, safe & full of probiotics. So true, add some fresh garlic & lemon juice, mash half the avocado & leave the rest of the avocado roughly chopped, and how could you possibly wait 10 days to eat it lol! Have you tried it with a little dash of turmeric & red hot chili pepper? Delicious!

When you use your fermented avocado in recipes do you drain the liquid or the brine off of it first? When you made your avocado feta cheese garlic and olive butter did you first drain off the brine or the liquid from the fermented avocado?

Great question lightsobrite! Yes, I typically reserve the avocado brine liquid and add a little to whatever recipe I use the avocado in. For example, when I make avocado hummus with chickpeas, lemon juice, garlic, cumin, tahini & olive oil, I'll use the avocado brine instead of using water. Regardless of what type of avocado butter you use, definitely add some of that delicious brine; approximately 1 tablespoon per full avocado. If memory serves me correctly, one large avocado = 1/4 cup avocado puree, so if you use 1 cup pureed avocado you'd add approximately 1/4 cup of the avocado brine. And, yes, for the feta cheese, garlic & olive butter shown in this video I used four avocados, a quarter cup of avocado brine, and 1 tsp of fresh squeezed lemon-lime juice to prevent browning.

And you could so add a lil' sugar to the #ferment. I have found that kickstart the ferment with my #pickles, and #SauerKraut.

Good to know you can ferment avocado, thank you! I tried and on the top of the jar it's darker, it's been 3 days of fermentation now. Should I just squeeze some lemon on the top? Does lemon juice affect fermentation?

Just stir the darker material into the rest of the ferment and sure, add more lemon juice on top. Lemon juice ferments which increases vitamin C. How does it get any better than that!

I'm so tired of throwing away avocados that go bad before I use them. Now I'm assuming I could buy three or four, ferment them in jars, and use them whenever I wanted.

Hi beautiful! Welcome to the channel! You are absolutely correct in your assumption. Ferment and then store either at room temperature or in the fridge to slow down the fermentation process.

Just to make life interesting, I fermented my avocado in vodka LOL. No, not on purpose. I recycle my vodka bottles as well as empty vinegar bottles Etc into water bottles and I accidentally picked up the bottle with real vodka instead of the bottle with water. I didn't realize until after I had filled the jar so I just decided to add the salt and see how it turned out. It was edible. I made sure I only ate it in the evenings though. Now I check what bottle I'm picking up to be sure. I did a similar thing once by adding vinegar to my coffee by accident. Now I try to check the bottle before I use it. I don't actually drink Vodka. I buy the cheap stuff to make homemade bug spray. When I made the bug spray with alcohol it irritated my sinuses and lungs when I breathed it in. The spray with vodka in it doesn't bother me at all.

Avocado in vodka - now that is original!! Though I suspect the avocado is preserved as opposed to fermented. Still, I bet it tastes interesting!

Please be careful with that knife. I stabbed my hand recently doing it the exactly the same way. Just seconds before I felt it could happen but didn't stop. I would normally use a big chef's knife, put the avocado on chopping board, not my hand and also not use the top of the blade but the long part and chopped down on it like a axe. Loved the avocado with the olives I have both nearly every day . If the avocado is a bit hard will the ferment soften it up.

Ouch! 😫 That sounds painful! Thankfully I don't normally stab myself. I do, however, get a lot of paper cuts lol! Nice tip for getting the seed out of the avocado. Thanks for sharing. 😊 Yes. I sometimes will purposely use slightly unripe avocados. They ferment wonderfully!

yes, that spooked me too. The thing is, no knife needed to remove the pit. Just slightly squeeze the pitted half, from the bottom and the pit pops free.

Wanted to try fermenting avocados and had an abundance which were perfectly ripe. I cut them in chunk size, added salt, grated garlic, chopped green onion and a diced tomato to top it off. Then added whey to ferment faster plus 3 TBS lemon juice...Have it on the cabinet now, but I'm worried if I ruined the ferment by adding lemon juice to the jar to ferment instead of adding it after fermenting? Any idea if this will ferment properly with lemon juice? Have been wanting to try this for quite some time after seeing your video. Hope I didn't mess it up! BTW, did you have to drain the liquid to get the yummy looking dip or should it thicken to that consistency when fermenting? Thanks in advance! Love your videos!

No, no, no - lemon juice will help preserve it and prevent it from browning; you were wise to trust your intuition!! Yes, I did remove some of the liquid to create the creaminess of that dip. That said, reserve the liquid as you can use it as a starter by adding it to hummus, baba ganoush, kefir cheese, and all sort of other ferments! You can add it to green smoothies or simply drink it, as it's rich in B-vitamins. Too, depending if you eat animal products, you can drizzle it over or use it as a dipping sauce for burgers, fried eggs, omelettes, etc. You can also use it as the foundation for a salad dressing. It's especially nice with rice vinegar over lightly fermented rice! The possibilities are infinite!!

Using the avacado liquid for my kefir cheese, in hummus and with eggs and on my veggie burgers...will be trying it all!. Your fermentation videos and food ideas have opened up a whole new level of healthy, tasty eating for me. I now have a separate fridge dedicated to only ferments. Thank you for sharing your knowledge about this. Watching your videos with all the healthy alternatives helps me stay conscious about my eating and body and keeps me from bogging down with that mindless old junk food, "Grab and go" syndrome that I sometimes slip into! :-)

@@TheIntuitiveBodyFoodieNetwork BTW, Just looked up "Baba Ganoush". Very similar to an old Julia Child recipe she called "Eggplant Caviar". I tried it several times, but it wasn't very fridge stable and I'd end up having to throw it away. But now I'm going to try it as a ferment with starter to see if it will hold up longer. I'm off to your video list to see if I can find your recipe on this! :-)

@@dl7919 Eggplant Caviar is a very appropriate name! Not coincidentally, that's exactly why I started fermenting dips & spreads, because I too found I was tossing more than I was eating and thought that was insane! Talk about a waste of time, energy & money! So many ways to ferment baba ganoush; water kefir, fermented whey, the brine from avocados or kraut or any other vegetable you ferment. Even kombucha is nice in baba ganoush if it's made with green or white tea! Btw, I just peeked through all my videos. Apparently I never uploaded it 😱. Am on it!!

I would think lemon would slow a ferment as the acid keeps things "fresh" so I would add it after.

It still tastes like avocado; however, it's sour instead of buttery sweet. Definitely add herbs; ups the nutrient content!

The avocados do not turn brown? What about after removing them from the brine to use in a dip/salsa/guac? I know acid helps, but do the “good bugs” from fermenting also prevent browning?

The only thing I can tell you is that's never happened to me in all the years I've been fermenting avocados. Beyond that, give it a try and see what else is possible.

I've left fermented avocado outside the fridge for almost 6 months. It was still edible and still contained probiotics. I usually use the liquid in hummus & other dips that call for water.

Lots of controversy around avocado pits. That said, you ferment it like any other vegetable or dip; just be sure to grate the pit first.

When it comes to fermentation, it's important to keep in mind that food is essentially rotting. It's true that during this process, beneficial bacteria feed off sugar. However, these bacteria also help break down fats & proteins as well. That is why we are also able to ferment raw meat.

Not necessary if you use this type of jar & lid. It's not airtight so won't explode.

No. Epsom salt is not salt. Rather it is a form of magnesium.
