Hello Anna, I love your channel and your energy! So refreshing! You inspired me to make fermented asparagus a couple weeks ago and no doubt they are delicious! My second batch I added a couple more ingredients, which I think really kicked it up ten fold. In addition to the garlic, I added a dash of red pepper flakes and lemon peels (peeled lemon skins with a potato peel to get just the yellow skins for the best flavor oils from the skin). They were SOOO GOOD I ate the whole jar and had no guilt about it whatsoever! Okay, in my defense, it was a pint jar :-) nonetheless, absolutely fabulous! Five days ago I made two more jars. I even went out and bought "special" tall half gallon jars specifically for asparagus! I simply cannot bring myself to make them any other way now! Thank you for your inspiration! I believe you are my new fermenting bff!

Do you need that blue cover or can you use something else. I know a very washed rock will work but I was not sure about that blue cover

You do not need the blue top, a regular mason lid or plastic lid will work and then you’ll just need to burp it (open the lid and close it) every day.

This one isn’t, but he gave me a ton of seed garlic which I’m racing to get in the ground!

Why keep them away from other ferments? Also, on the salt you said 2 tablespoons but put in 1 tablespoon? Sorry for the confusion I’m very new at this. By the way I love your videos!

You want to keep them separate because they each use different types of yeast and bacteria to ferment but if they’re close enough they can cross over. It’s mostly to protect your Scobys from getting contaminated by other scobys. Not so important with lacto-ferments

Luann, she did say 2 tablespoons of salt for a quart of water but she just used a pint so only put in 1 tablespoon. Isn't she just so much fun to watch?!
