SMOKED FOR 3 HOURS, THEN BEFORE WRAPPING IN FOIL
ADDED PARKAY SQUEEZE BUTTER, HONEY, AND BROWN SUGAR, AND SWEEET HEAT 50/50 OF Sweet St Louis & Spicy Homey Honey
PUT BACK ON FOR ONE HOUR WRAPPED
REMOVED FOIL, ADDED MORE SWEEET HEAT SAUCE
LEFT IN THE SMOKER FOR 15-20 MORE MINUTES FOR SAUCE TO SET

Yes I found the 3-2-1 doesn't work for me. 2 hours double wrapped will give you fall off the bone ribs. Lot of steam in that pack. I tend not to wrap at all when using the PBC. It's just a preference. Thanks Thomas.

Thanks Steve. Yea I'm liking that Fire Dial. Easy to use. Let cool off and grease n sauce comes right off with a 2 or 3 inch putty knife ready to go again. I like the color and light reflective sear it put on the ribs when I turned them over. I think this accessory will become popular.

Phil N Florence thank you Phil - just ordered my hinge and the stainless door for my WSM - looking forward to getting and installing them soon.

@@LouisatRshackBBQ Some mods are cosmetic, but that hinge is a must have when you constantly take the lid off. I never liked setting it down on pavers or concrete eventually scraping the paint over time. The hinge is probably a top 3 mod. The SS door is cosmetic, but it is a very nice improvement being heavier, stainless, easier to work with and so slick lookin. You will love both of these mods Louis. The other top mods IMO would be the casters and handles. A 22 is a hoss, and when hot you want handles. Plus lifting the mid section out to do other things. Then when loaded down cooking and a storm comes up, it's good to be able to roll the cooker up under something. I don't want to be lifting that thing all the time, or taking it apart to move it.

Great looking spares Phil! The color was spot on, I thought they were going to fall apart when you moved em from the tin foil but instead it had a great bite through. That fire dial is really cool and Phil blings his grill with new knobs. :)

Phil N Florence my version only means I was not prepared like you was. My drum cooker I can’t shovel coal in like the Weber and I had plenty of salt but of coarse no pepper or vinegar in the house. So I made do with what I had. I used salt, Heath Riles AP rub and Heath Riles vinegar bbq sauce. It turned out really good!!!!! Of course I cut the money muscle off and had it for a snack. 😂😂😂😂

When you look at me today, you have to realize that there is a young man in there somewhere. LOL When talking to younger guys now, I tell them I use to be you and have a big laugh. Then I tell them one day you will be me and have another big laugh. Then they suddenly are not laughing anymore. hahahahaha. I have fun with it, but I won't lie, it was hard for me to accept it about 5 or 6 years ago to realize I ain't that guy anymore. That manly pride. Tusday nite ribs... ain't nothin' wrong with that! Thank you Janet, for bringing them home! They turned out nice with the rubs and sauces you used... good color! The fire dial looks like it's here to stay! Hey Phil, that was a big enough piece of wood to add just the right amount of smoke to the ribs... about an hours worth... yeah buddy!! Good vid... like the music on the intro... felt like I was about to watch a comedy out of the 1930's. Thanks Chief... it was nice talkin' with ya! There are 3 people who see all the details when watching. Biggs, HMB, and Campmeat. Sometimes I stick things around in crazy places just to see if they are spotted. LOL. Yea it was already so hot I was wet from sweat, so I changed shirts and grabbed a matching hat. Hat Jay sent to me. I like to incorporate different music, usually old music. That one called The Premier, use to here it a lot on old movies from that Era. Just something to catch your attention. LOL I put the knobs on today.Look good. Enjoyed the phone chat. Have a great weekend what's left of it. Hope you had some soup and get some relief. LOL

Great looking color on the Ribs, what is the light blue attachment, is this another mod. You have to check out Raleigh Smokes latest Beef Jerkey video and see how he adds a rack to the wsm. Could you ever see s need where you could use ceramic halve pieces in lower grates to achieve different zones similar to kamato Joe. Janet the sides looked as delicious as usual.

Hey John, that blue thingee is just a magnet with a hook I picked up while back. Thought I may need it for hanging something on it. I've used is a couple times. No Bigee. I should've just said that's my new secret mod. lol I saw Jon's video. He has a good jerky recipe looks like. I need to try that. He says if you try it just once, you will do it again and again and again. That sounds like an addiction worse than crack. lol Never thought about ceramic in the wsm. The possibilites are endless. Thanks again for the cool touch handles. I put them all on yesterday. Looks great.

Good Sunday to ya Joe. I enjoyed that cook. I'm really liking the fire dial. I think it gave a lightly colored I'll call reflection sear to the ribs. It's working out real well. The St Louis sauce has a great flavor. Added to the Homey Honey made a great pairing for these ribs. So I am using up the nice rub and sauce pack you sent a while back. Thanks for everything. Just keep on trucking. I promise you one day your channel will be big. I need to get over there and see what you are doing to that deck.

@@BBQJOE Oh, I meant to tell you about that. Now that I've used it half dozen times, I really like it. I just wish that they would include a timer on these things. I love the 4 probe wires. It really helps out when you are keeping up with multiple cooks. It is a quality build, and has the stand and hanging feature. No wifi, but since I'm usually close by I don't need that. You can't go wrong with this one. I also love the color. I haven't been disappointed. It's now my go to wireless thermometer. I have a timer with 4 separate timers on it which I love. I'm sure you've seen it. I recommend it.

Hey PIF, JIF and TIF, That end result plate....that is the essence of a good bbq, ribs, corn on the cob, and beans, YUM! Did Toby get the Camp Meat or did u sneek it while cooking, or did u pull it off the bone and add it to the beans? Ribs looked good, nice to see ya there buddy. What do u use the blue hook magnet on the side of the center barrel for? Is it for wire management or to hang your tongs? I do like the second act change, VERY NICE LOOKIN HAT. J

I'm lovin it even though only 2 cooks. It seemed to give a high level light colored reflection sear when I turned the ribs over. Pretty color and flavor. Can't wait to use it some more. What is your first name, and what state are you in. Just want to know what to call you on replys. Thanks.

Can you just use the water pan as a heat deflector by not putting water?

Yes, you can. Some put sand in it too. They say it helps stabilize the temperature in the pit.

She would fit right in. Janet and two of my sons are Tiger fans, Janet's sister and husband graduated in 1981 when they won the first football championship. So as you can see this is Tiger Town. I claim to be a Gamecock Fan, but I do watch and pull for the Tigers too. I'm not a fanatic, but the rest are. They are dangerous. lol Thanks for watching and leaving a comment.

I live in lake city Phil. Is the sear grate for the Weber worth it or just a gimmick? Vortex as well? I know you have both of these but didn't use them for Jared's cowboy steak. Please let me know before I blow my money m btw, Jared was wearing Clemson. U should convert from Gamecocks to Clemson. Lol

Hey r m, It's not necessary to have any accessories to get a good steak. People buy those type things because they see others use them I guess. Some accessory items do make a difference or make something more convenient or save extra time, or in some cases make things better. Since I have a KZfaq cook channel, I buy just about all that stuff so I can show it off in videos. There are usually several different ways and several different cookers you can accomplish whatever you are doing. So, in the Cowboy steak cook, I use a griddle grate (which is thick steel and gets extra hot) to sear the steak on, just because I chose that option this particular time in place of using the vortex or Slow N Sear. The sear grate is cast iron so it gets very hot for searing steak. Just another item to use. If you wanted to, when you get to the searing you could bring Grandma's cast iron frying pan out to the grate, and sear the steak on that, or even inside on the stove top. So, it's just another way to do the same thing. The vortex does a great job doing wings, placing the wings around it like in my wings video. No sear grate needed for that.

@@progers5019 awesome brother. Thanks so much for the advice. One more question. I'm thinking about buying a Weber performer deluxe that has a side table and propane starter . I already have the chimney starter that I use. A lady is selling one brand new in the box for 275. Or should i just get the $165 Weber kettle at lowes and keep it basic? They di have the master touch for 220 with the gourmet grate system like your Weber smoker has. I'm just confused. What would you do Phil

@@B3GINNER Well r m, it depends on each person's situation, how much you would use it, and just what you want to cook on your grills and smokers. Of course finances play into decision making. If you have set aside the money to buy either of these options, and you would be grilling say once each week, and the kettle is a cooker which can handle about anything you would be cooking or smoking, then I would suggest going for the performer deluxe. The side cart is a very handy part of that design. If you only had the basic kettle, you have to have an additional table nearby to put your food on. I only have a kettle, but would love to get the performer. So, seems you have all green lights and the performer is priced right. You can always add accessories down the road as time passes to add to your BBQ fun.

Hey Jonathan. Haha, yea there aren't but so many cuts of meat to cook. The CB door is nice. Worth it you ask. Well, the food taste the same. IMO, mostly bling but it is much more rigid and durable being ss. It sits in the door opening different without any snotched wing tabs to fight with. It makes the cooker look good, is definitely an upgrade. It will not be subject to damage or bend. If you don't mind spending the money, it's worthwhile.

@@Texas2.5 I think the door has been improved for fitting better and tighter since I got mine. Mine came with a slight gap at the top, but I worked with it and managed to conform it to fit better. Greg over at The WOODSHED smoke and BBQ recently put one on his and it looks nice and tight. I never gave much thought to a slight puff of smoke here or there. I'm sure some put gasket material around it and some don't (like me). I'll ask Greg if he did.

@@Texas2.5 Per Greg I put gasket around my door and I bent and shaped my door to fit better. Tell him to get nomex 1/2 x 1/8 self stick from bbqgaskets.com

You know what, I listen to my vids with headphones which doubles the audio and makes the music sound so much better. I have a clip on mic that I bought about a year ago and used only once. After listening to my vid this morning on the big screen, the sound wasn't the same. I guess I need to begin using my clip on mic on every video. Thanks for the feedback. Hope your liked the video. love watching your videos. but like 90% of other videos, volume leveling needs attention. music is loud as hell while you can barely be heard

Hey Parker. Sorry about that. I try to turn music volume down when I'm talking, and up some for enjoyment when I'm doing other things without speaking. I gauge the volume setting to what I hear in my headphones while editing. I usually use the next to lowest setting and sometimes the lowest setting. If you are wearing headphones during viewing try turning down the volume on your end and see if that helps. Thanks for watching.
