It’s not to protect the atmosphere but to protect the steel plate the water is shooting out of. This is so they can check to see how much damage the engine will do to a steel plate spraying water so they can use it for the launch. It works quite well

You can tell because the exhaust collapses on itself immediately after exiting the nozzle, making that single shuttle-like mach diamond. The sea level engines' exhaust actually expands out from the nozzle exit before collapsing back into a series of smaller mach diamonds.

The first is a non-atmospheric raptor designed for space for the ship of the starship and the camera don’t show all the flames and the second is v2 atmospheric raptor for earth so it’s more effective on earth on water deluge (the only raptor for demonstration) and the camera is well placed for a test cause it was demonstration only

All I remembering is some special metallurgical process done via hand working was lost? I wonder what the improvements are to this engine? Like is there some kind of frequency control to properly mist the fluids like through cymatics? I wonder what they did. Cool beans regardless.
