Never done before. But try put in the freezer for a tiny bit before cutting to help stiffen it up and make better cuts?

I literally did this yesterday for the first time after watching butcher wizard. It was loads of fun. My Costco sold the cut for $5.19/lb. Proud of you. Mine was just under 20#. Worth the time and energy. Vacuum sealer helped a lot. I won't be buying just the roast ever again. This is way better. Had the Denver steaks for dinner last night!

I definitely need to do it again, I think we messed up the first time LOL. But we cut our own ribeyes every time now.

@@JennyMitich practice makes perfect. And cutting it ourselves saves loads of money. We found bone in ribeye roasts for 5.97 to 6.77/lb. Before Easter. Keep on sharing you are helping others to gain confidence and growth. Proud of your channel and sharing. 💚

Try “ The Bearded Butchers” for butchering. I have years of experience butchering my own beef, deer, elk… and they do a really good job of showing and explaining just how… 1 yr+ carnivore and 25lbs less…and I’m 66 yrs old !

Protip: head down to the local butcher and ask them to show you their butchering methods. Many butchers are proud of their craft and happy to share info. A lot of the times they have some extra hardware sitting around and will let you bring it home.

If you put the beef in the freezer and take it out before frozen will be easier to cut up

Pretty good for a first time. I'm with the ones saying butcher it when it's near frozen. It helps when the meat is really cold.

Ask for a Chuck Roll at your local Amish store. I recently paid $4.69/lbs. Breaking it down was pretty easy. Be sure to get a butchering knife, a vacuum sealer, and some room in your freezer.

@@JennyMitich I bet better than if I tried. I need some good knives or sharpen what I do have. My husband used to keep my knives sharpened. Sure miss him down here on Earth.

I break down my own chuck roll when I can find them. Great chunk of meat. For breaking down the muscle groups you want a thin flexible boning knife with a very sharp tip. I use a Victorinox that I have had for 35 years. The trick is just using the first 1/2 inch of the blade to break down the muscle groups. Then use it to peel off the silver skin. If you are going to grind the trimming cut out as much silver skin and connective tissue that you can. Especially if you plan on making sausage. If you have younger kids take that time to show and teach them to be self sufficient. Great way to have some productive family time.

Bought a case today and broke down three first time next time I will do another research on how to do it better 44 days on the carnivore diet down 30 pounds

once you do the first cuts to separate the large top and end chunks slightly freeze these larger pieces to make it easier to cut the steaks etc.

Since switching to carnivore my dream kitchen has been turning into a separate cold room like a grocery store meat department that i can cut large chunks of meat like this that is cool. Also its all stainless steel and tile so i can just hose it down when done. 😅 I'll then have a "fancy" kitchen that is just for show.... Honestly i should probably do all the cooking in the first kitchen also to avoid grease. That's my biggest con with this diet is teh cleaning.

I do this all the time to save money. I place it in the freezer for an hour or so, making it much easier to cut.

Cutting with one eye closed will get you a nice even cut when slicing the steaks. I used to do this with bread, it’s easier to track the knife with monocular vision. I guess also being slightly frozen helps but I don’t want to bother with that, I’m not terribly fussy like that. Thanks for the video, I really want to try this out since it looks like what I get anyhow; a steak on occasion, a lot of pot roast, and maybe I can throw some trimmings into the freezer and save up and grind for extra burgers.

Did this recently. 4.50 a pound. Took off top piece but just cut the rest up into large roasts. Not sure here all the cuts are. Definitely need practice. A boning knife is ideal w a 10” breaking knife.

The chuck was definitely more complicated than the ribeye, I would recommend starting with the ribeye because it’s so simple and you can cut whatever size steaks you want😀

Costco right now has Beef Chuck Roll for $4.19 Lb I called it's 7/3/2024 ... I don't break mine down I just cut them 1 1/2 inch thick so I get a little of everything in my steak. Cook in the airfryer 14 min, 7 min a side just some Pink Salt. Get some Freezer Bags Ready.

I actually buy bulk meat often and cut it down. Its do much cheaper and you can make your own cuts as you like them. .

Sharpen your knives and you won’t need to par-freeze. Towards the end, you were literally sawing the meat. A properly sharpened knife should cut through like butter.

That was the video I watched and I *know* I'm going to be watching that one again and again... but I consider this video to be a good review of that one. You did a good job, learning from his demonstration + teaching. That's an excellent referral. I also read your advice in reply to elmer and that comes just in time for me, as i'm shopping costco tomorrow and I will be stocking up on whole ribeye. THAT was an excellent price, expecially compared to the $20/lb they charged for ribeye steaks last time I went. Sheesh! (Interestingly, the same price as at my local Trader joe's.) I'm not ready for the chuck roll yet, but I may go for the sirloin. What do I ask for if I want to cut my own Porterhouse steaks (and why did I automagically capitalize the 1st letter of 'porterhouse' without even thinking)?? Thanks for this and for that.

Better to get a chuck steak with a good center line of fat. One side is the Denver, the other a Chuck Eye. Saves you money and don't deal with all the extra meat for nothing. I've also found cutting rib eye or new york steaks isn't worth it. By the time you cut away the fat from the rolls and spend an hour or two cutting and sealing, you could have bought the steaks for the same price.

1. Place giant piece of meat on giant pan. 2. Rub giant piece of meat with any kind of powder you can find in kitchen. Also cover with anything that squirts out of plastic bottle. 3. Place giant piece of meat on giant pan into giant oven. Whew! 4. Roast giant piece of meat until fire department shows up. 5. Slice into slices on slicer and make me 874 sandwiches. To Go.😊

Hello! They are typically in the back, you have to gets the attention of one of the meat cutters through the window and they will get it for you. Here’s what you ask for: Whole ribeye Whole sirloin Whole Chuck Roll I’m typically asking them to get me the biggest one available but they can find ones of varying size for you 😀😀😀

@@JennyMitich I’ve seen you shop at Jewel in one of your videos if I’m not mistaken so I figured you’d live in the Chicagoland area. Costco in Bedford Park IL is a business center so they have a lot of different cuts that other ones don’t have. And most of the time the meats are cheaper as well

As much as u spend on beef u should just buy a cow, I got a 1100 lb cow this month for $.3.80 a pound and I know were it came from.
