Five Generations of Making Soy Sauce the Traditional Way

Great Big Story

7 жыл бұрын

Japanese shoyu, or soy sauce, was traditionally brewed in vats over two years in a process that dates back to the 7th century. Over the past 60 years, global demand gave way to industrialization, and today less than one percent of shoyu is produced in the old way. But on the island of Shōdoshima, Yasuo Yamamoto ferments soy beans traditionally in bamboo barrels similar to the ones his family has built for the past 150 years. And while it takes four times longer than the modern way to produce, the results are undeniably delicious. Let's have a taste.

An important distinction to be made: the barrels are made of cedar, not bamboo. Bamboo 'straps' are used to hold them together. Cedar is wood and is one of the best woods to use for this complex production, just as with any other 'live' food such as wine, authentic balsamic vinegar, vanilla extract, mustard and of course some alcoholic beverages. Bamboo on the other hand is not wood but is a grass, from the large family of evergreen flowering plants. If bamboo were used instead of cedar, nothing would occur like what we see happening in this video.

@@ChefMimsy they distroy the beans with drain cleaner (NaOH) to get out all the flavor and they neutralize the soup with hydrochloric acid (HCl) NaOH(aq)+ HCl(aq)-----> NaCl + H2O You get the black soy sauce with NaCl (salt) wich makes the sauce salty.

Making soy sauce the traditional way for 150 years. Making sake the traditional way for 400 years. Pride in work. Joy in work. Soul and heart. Small, family-owned businesses making things the good old way for centuries. It's not something you often hear from the US or any other part of the world, except Asian countries.

@Silverizael

Why would soy sauce make you queasy anyways?
@alex.a.303
@alex.a.303 7 жыл бұрын
Queasy because commercial soy sauce, depending on the formulation, can be an acidic or plain salty flavor which doesn't go well with dishes that already have a strong flavor due to the other ingredients. Imagine having a sensitive stomach, and you're eating a dish that has a soy sauce base for its soup, and the soy sauce formulation ph level is almost or is acidic, queasy is definitely the feeling.
@Silverizael
@Silverizael 7 жыл бұрын
Yeah, makes sense. Generic soy sauce does have a sharp salt flavor most of the time. I was really just checking to make sure you weren't one of the people trying to claim that "traditional" soy sauce is healthier because it doesn't have gluten or some such nonsense like that, ignoring that it has all of the same general ingredients.
@alex.a.303

Definitely not my basis for saying it makes the stomach queasy but Gluten Free doesn't help your stomach unless you have celiac disease

I bought the most fancy version of his soy sauce: CRANE label! I haven’t try the Jasmine label which is the least expensive one but the Crane version tasted phenomenal! Very complex layer of umami flavor! I will definitely buy it again when my bottle runs out!
