I am no expert but I think that is how it is done. The first part is used to loosen the batter so that when the whole egg white is added it won't loose the air that is incorporated in it.

I have a problem, i'm in love with Fluke. I really love his personnality, his acting skills and he is really too cute. He is one of the best actors i have ever seen in Thaï drama. So i'm In Love. Let's move on. This little video brightened my day, thank you. I didn't understand everything but at least I understood that Fluke made a birthday cake for Ohm, too adorable. he is so happy doing this organizing the place, preparing the cake, editing the video and then finally delivering the recipient, this came from the heart and that's why he enjoys it so much his smile illuminates my soul, this child is so special 🐻💙🐹

The fact that Fluke said without shame that he learned from KZfaq, that the cake is not pretty and maybe not tasty comforts my heart cause BOY SAME Anyways it was so cute
