Yeah not gonna lie Texas Wildflowers are powerful little boogers. Mesquite, Huisache, Locust, Ebony and Citrus for the tree blossoms. Bluebonnet, Salvia farinacae, Lemon Mint, Horsemint, sunflowers, Gaillardia, Mexican Hat, Damianita, Thistles etc etc.

I just made a brag it with 3.3 pounds of Arizona Mesquite honey I used Lutra it took two days to ferment out I can taste oranges citrus

I’ve had good luck adding Gambrinus honey malt in the grain bill for Honey* brews

I used my friend's honey in a batch once and the floral character was too overpowering for me. I just made a honey lager with with a more basic store bought honey and was much more happy with it. Great vid!
