Ingredients:
Place cocoa biscuits on the bottom of a baking tray (24x24 cm).
Curd:
3 vanilla mascarpone cheeses
3/4 cup of sugar
1 vanilla sugar 16g
5 yolks
Mix until ingredients are combined
1 sugar-free vanilla pudding (64 g)
1 tablespoon of potato flour
half a stick of melted, cooled butter (100 g)
5 egg whites
pinch of salt
half a cup of sugar
Beat the egg whites until stiff, gradually adding sugar.
Add the egg whites to the cheese mass and mix gently. Pour over biscuits
Meringue:
4 egg whites
pinch of salt
3/4 cup of sugar
Beat the egg whites until stiff, gradually adding sugar
1 tablespoon of potato flour
Mix for a while
Bake for about 60 minutes without convection, top-down heater, in an oven preheated to 170 degrees, on the 2nd level from the bottom. Chill well in the refrigerator
