For 4 pancakes
• Egg white: 65 g | 2.3 oz (2 eggs)
• Lemon juice: 5 g | 0.17 oz (1 tsp)
• Granulated sugar: 25 g | 0.9 oz (2 Tbsp)
• Cornstarch: 5 g | 0.17 oz (1/2 Tbsp)
• Egg yolk: 35 g | 1.2 oz (2 yolks)
• Cake flour: 35 g | 1.2 oz (4 Tbsp)
• Salt: 1 g | 0.03 oz (1/8 tsp or 3 pinches)
• Milk: 15 g | 0.5 oz (1 Tbsp)

So I tried this today and I wasn't expecting much but gosh, I love it! I replaced the cake flour to all purpose flour because that's all I have. I didn't change the amount. It ended so well! Just the pancake alone is heavenly❤️

I love your method of mixing it and piping the pancakes into the pan. I've made them before a few times at home and the flavor is wonderful but they didn't fluff up as big as yours. Thanks for sharing your secrets. I will try them!

Thanks for all the tips, Aya! In the past, I have made Japanese soufflé pancakes, but semi-successfully. Will try your recipe and techniques! I can see that having the right kitchen tools matter. Considering purchasing a nonstick griddle pan that has a flat surface for easier flipping. 🥞

Soufflé pancakes were invented in Hawaii, by chef Nathan Tran in 2009, at Cream Pot restaurant in Waikiki. Japanese chefs "stole" his creation in 2016. Just FYI. Many brunch/breakfast places in Hawaii also make it, but not called it Japanese. It's an American dish. Nice video recipe and instructions. Great work!

@@jfrancis No, Japanese didn't, they improved quality control of cars, while Americans added built-in obsolescence to increase profits. But your example misses the point, because the Japanese don't claim to have invented the car. In contrast, Japanese chefs do claim creation of Soufflé pancakes, without crediting its Hawaiian origin. That's unethical.

I haven't tried it but I'm curious! The pancakes should need some level of glutens to hold the body structure, but you might be able to mix them both. if you don't mind a slightly heavier texture!

In recipes, heat is typically divided into low/med/high, right? So, on a 1 to 9 scale, 1-3 is low, 4-6 is medium, 7-9 is high. If a recipe calls for low-med heat, it's going to be 3 or 4 that you want to set it at, and med-high will be 6 or 7. BUT keep in mind that not all stoves are created equal, and some will be hotter or colder than others. For example, I set my stove at 2 when I'm poaching an egg, and it's perfectly cooked in 4 minutes. When I'm staying at my parents' home, to poach an egg in 4 minutes, I have to set the element at 4. You may even have a stove where one element is hotter or colder than the others. So when a recipe calls for low, it's typically a temperature at which something can cook or simmer undisturbed for a long time without burning. Only you will know which setting that is for your specific stove.
