Last lot of days of food prep after the six monthly grocery haul!
And I've realised I put the chicken pie pic in yesterdays video and I didn't make chicken pie until todays video! Whoops!!

There's always a juggling act in the beginning period of the grocery haul when it is fresh, because you want to make sure you use up all the food that can't be preserved but you also have all this exciting food to be eaten!
You have to figure out what is most important to handle first and go with it.

This is my new fave sweet cornbread ingredients here; makes 12=15 serves; I use yellow corn meal - ¾ cup - Corn Meal 1¾ cup - All-Purpose Flour 1 tbls - Baking Powder 1¼ cup - Granulated Sugar 1½ tsp - Salt ½ cup - Melted Butter or Vegetable Oil 1 cup - Milk 2 - Eggs Preheat the oven to 375ºF Add the Corn Meal, All-Purpose Flour, Baking Powder, Granulated Sugar and Salt to a medium-sized bowl. Whisk to combine Next, add the Melted Butter or Vegetable Oil, Milk and Eggs to a small bowl. Whisk until well combined Add the Wet Ingredient Mixture to the Dry Ingredient Mixture and stir until just combined. Try not to over-mix the batter Using Cooking Spray or Butter, grease the inside of a 13″ x 9″ Baking Pan. Add the Cornbread Batter and spread evenly Bake for 20 to 25 minutes at 375ºF until the outside is golden brown and a toothpick inserted in the center comes out cleanly Cool slightly on a baking rack. Cut into desired portion sizes and serve warm Thanks for all your videos - wonderful stuff! This is also good with North Carolina Pulled Pork

Recipe for Spaghettios - recently made this for a bunch of kids at a camp function; thought you might like it; quick, cheap easy: For 2 cups: 15 oz tomato sauce, 2 Tblsp milk or water; 1/2 tsp each onion powder and garlic powder; 3/4 tsp kosher salt; 2 tsp each butter and agave syrup or honey; 1 cup "o" shaped pasta (which I can't find so I use small shells). You can cut up leftover hotdogs or bacon etc to add. I hear this is also a ''cannable' recipe although I don't pressure can

Awesome looking food and video.. next time if you get extra chicken you can maybe make some chicken sausage 🌭 .. there's lots of recipes on that too ..did your grinder come with a sausage stuffer attachment? I see a off grid guy use his grinder to also stuff sausage
@OurSmallFootprint
@OurSmallFootprint Жыл бұрын
Yes! it has a sausage stuffer, but with only one small fridge working we haven't been doing sausages because they need to sit exposed on trays in a fridge for 24 hours to let the casings dry out and suction :S. Once we sort that out again though!

To reheat the fried chicken, place it on a baking sheet with a baking rack; some of the residual oil will drip down onto the baking sheet. About 20 min at between 300 and 325 degrees F. The lower temp will warm up the center while not over cooking the crunchy coating. We usually do this with a slighty sweet cornbread and a veg for the second showing.
@OurSmallFootprint

I actually tried it the other day, exactly like you said! On a rack over a baking tray and it came out perfectly! Was super super happy with it :D. I still need to try making cornbread, I haven't as yet!

Still thinking bout bacon 🤔 🥓 Aldi sells a pork loin roast which is strung into a roll. I often buy it to slice into loin chops at a cheaper price than .. loin chops. It is around the $11-13 price per kg so a bit cheaper than Costco pork belly. You get the middle bacon then. Choose the thinner loin pieces. Just a thought..
@OurSmallFootprint
@OurSmallFootprint Жыл бұрын
I'll have to have a look at the price of the loin at costco too, I hadn't really thought of that, though we do like the fatty belly hehe, and sometimes its more meat than othertimes. It's worth experimenting though, and as I find other ways to save on other meats, like the $1/kg off the pork we eat because I buy three, and buying the trim etc, it leaves a little more budget for things like the bellies etc, or that's how I look at it, I don't need to reduce my food budget, we manage with it where it is, so I can shift the budget around a little hehe :D

Try canning some of your mince beef. I brown 1/2way, with salt, pepper, onion powder, garlic powder. I use it for Mexican > 🌮, enchiladas, Mex.lasagna, chili; Shepherds pie; Italian lasagna, pasta dishes; Use the fat cap in the jar to add Mexican, Italian, or gravy base. Breakfast sausage mix. The first two pigs we got were bought as pets, they are Australian Miniature pigs and were purchased desexed, I have loved pigs my whole life and it was kind of a dream to have them as pets! The other pig we got was from a friends litter, he was a runt, we reared him because he was struggling a little with the rest of the litter, we had intended to get him desexed but he had a herniated testicle and it wasn't going to be a simple thing to do, quite dangerous and expensive, so instead we left him whole. The plan then was to get a sow and breed him and then we could use the piglets as a food source, however we just haven't been in a position to do that 'well' with another yard that the sow could live in and farrow safely, perhaps a second sow so when she wasn't with the boys she had company etc, it has all been a bit 'big' for us to manage! With the chickens we have started a few extra pens with some pure breds in it, ideally, we would like to sell some either fertile eggs or pullets or roosters just to help with the cost of maintaining our flock and because we love hatching chickens out! But we are still in the process of figuring out the best way to process the excess roosters, we haven't really managed a good method yet and if we can't, then we can't keep incubating eggs! Mostly we keep them just for eggs!
