In this clip, Rutgers faculty member Mukund Karwe talks about his area of expertise: food engineering, which includes food manufacturing and food processing. Here he demonstrates two aspects: the use of extrusion in food manufacturing and high pressure processing to safely preserve flavor and texture with the degrading effects of heat.
