Watch this episode of #30MinuteMeinDaawat where chef Sanjeev Kapoor demonstrates how in just 30 minutes you can prepare a delicious meal of Mixed Vegetable Tahiri.
TAHARI RECIPE | तहरी
Ingredients
1½ cups basmati rice, soaked and drained
5-6 small potatoes, peeled and halved
12-16 cauliflower florets
½ cup green peas
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
10-12 cloves
10-12 black peppercorns
2-3 black cardamoms
1 inch cinnamon
1 bay leaf
2 medium onions, sliced
½ teaspoon turmeric powder
1½ teaspoons red chilli powder
1 teaspoon cumin (jeera) powder
Salt to taste
Fresh coriander sprig for garnishing
Method
1. Heat oil in a deep non-stick pan. Add cumin seeds and let the seeds change colour.
2. Add cloves, peppercorns, cardamoms, cinnamon, bay leaf and onions, mix and sauté till onions turn translucent.
3. Add potatoes and cauliflower florets and mix well. Add turmeric powder, chilli powder, cumin powder and salt and mix.
4. Add sufficient water, mix, cover and cook for 5-6 minutes. Add rice and mix.
5. Add green peas and mix well. Add 3 cups water, stir to mix, cover and cook till fully done.
6. Garnish with coriander sprig and serve hot.

Tahiri is northern kayastha's favourite food. Most of the kayasth families makes it in the afternoon of sunday because busy schedule of sunday morning we also make it in the afternoon of holi festival. After playing holi everyone felt tired so make tahiri because it is simple , tasty and takes little time.

You are the most well-known chef in this country. I am surprised that a person like you is not confident, as to how much salt should be used in the preparation of your recipes. In no restaurant I have ever been asked about how much salt i would like. Even at my home, my wife or my cook has never asked me about how much salt I would like, before cooking any dish.
