It is....we had some flops in the beginning....sometimes still do! But once you get the hang of it and find a way to incorporate it into your routine, it is wonderful!

I've been watching alot of sourdough videos and they make it into a science project! Love your easier approach to it and it looks fabulous.... Beautiful family - God bless...

Thank you for your kind words. Justin hates when others over complicate. His loaves are always a hit. I sure hope this more laid back approach helps....he makes it look so easy.

I've staged at a few bakeries which swore by cold proofing. To clarify, you're cold proofing, not cold bulk fermenting, since the boules have already been separated and shaped. It's a little confusing since fermentation is indeed still happening. The problem with your cold proof is that it wasn't long enough to develop the proper rise and additional depth of flavor that it should have, given the temperament of your bulk fermented dough which was quite young when you put it in the fridge. It's natural that your countertop boules proofed (they might have been a tad overproofed btw, judging by their slackness and your hydration %) and your fridge boules were underproofed. With this same process in the video, I suggest you try lengthening the overnight cold proof to a solid 16-18 hours for the boules. Bake from cold, they'll come out perfect. Thanks so much for the advice! We will have to try it! Sourdough is definitley trial and error. We have had some flop and others be so delicious.....just trying different techniques. Yes, Abel sure is a character!

I had been making my sourdough very similar to this video and recently was informed that I was also skipping a bulk ferment stage. After stretching and folding over 3 hours, I now leave the dough in an 80 degree area for about 1.5 hr. After that, form them into loaves and put them in the fridge overnight (makes them extra sour) and bake them in the morning. My loaves are now a lot more airy and have a great rise!

I’m going to save this video to learn from it , I made a sourdough last nite that fermented in the fridge , it tastes good but didn’t rise much either . It’s was my first loaf of sour dough ever! I’ll try my next one like yours. Thanks for the easy to follow video

Yes I prefer a bulk ferment on the counter, it allows for more activity. I didn't have as much success with fridge fermentation. Good luck! It's all an experiment!

the amount of back ground noise is horrible are there 25 tvs on in your house

We have 3 boys, so often times our house is filled with noise but I wouldn't have it any other way.
