Iba ang banana sa amerika. But i think you nailed it. However, if you used yung Mindoro na banana, it will taste more like yung sa pilipinas. As for the sugar, yung itinuro sa akin e after ng banana ang sugar. So ang effect nun, hindi sya caramelized, but a sugar crystal na nakadikit sa banana. But same, kelangan haluin ng haluin until dumikit sa banana yung sugar.

the mexican girl probably ate fried bananas , mexico has the same dish but without the sugar although they use cavendish bananas instead of a saba bananas. saba banana in general are a great for cooking since it's not as soft as other bananas like cavendish and it has no after taste. it's basically a good replacement for potatoes. mexicans and filipinos has many similar dishes though filipino dishes tends to be more simplified versions like their champorado/chocolate porridge.

Give u a tip. In zamboanga, we call it rebosado. You need to fry 1st the banana until it's golden brown, when it's done place the banana on a shit of paper or tissue. Then you'll need xtra pan to boil 3 cups of water. Bring to boil, put some cup brown of sugar, stir occasionally until sugar mix well with water, low fire not to ruin the sugar. (A spoon of vanilla if you have). When sugar starts to caramelize or a bit sticky, then put the fried banana. Mix until the sugar dries and stick firmly onto the banana. Then serve. Typically, we get rid of excess oil.

“Rebosado” is Spanish for “Battered,” as in like Shrimp Tempura, hence “Camaron Rebosado” in Fil-Chinese cooking. And do not place on Shit of Paper, Sheet na lang.

Iba din ang technique dito sa amin idol. Tinatawag namin na Rebusaw. Unang piprituhin ang mga saging, pagkatapos ay magpapakulo ng tubig na may asukal para macaramelize tas dun na ilalagay ang pritong saging. Iba-ibang paraan pero parehong resulta lang
