POTATO PASTRY
• 1 egg
• mix
• 1.5 cups of water
• 1 cup size - 200 ml.
• 1 cup of milk
• mix
• 1 teaspoon salt
• mix
• 7 cups of flour
• Mix with a spatula
• start kneading the dough
• put the dough on the table
• and knead the dough on the table for another 5 minutes
• a soft dough that does not stick to the hand
• cover the dough
• and rest for 5 minutes
• 5 minutes later
• divide the dough into 4 equal parts
• Make 4 large dough balls
• cover the dough balls
• and let the dough balls rest for 10 minutes
• 10 minutes later
• roll out the dough balls with a rolling pin
• Set the first sheet of dough aside.
• roll out the second dough ball with a rolling pin
• 250 grams of soft butter
• spread butter all over the dough
• put the second sheet of dough on top
• apply butter and fold as shown in the video.
• put the oily dough aside
• roll out the other dough balls in the same way
• and fold with oil.
• cover the oily dough
• and rest for 30 minutes
• Peel and boil the 1 kg. of potatoes
• mash boiled potatoes
• Chop 2 medium sized onions into small pieces
• melt 100 grams of butter in the pan
• add the onions to the melted butter.
• and cook the onions
• add potatoes
• mix
• Add 1 teaspoon of salt
• and cook, stirring, for another 2-3 minutes.
• After 30 min
• roll out the oily dough with a rolling pin
• cut the dough into four pieces, five fingers thick
• potato stuffing
• put the filling ingredients on the phyllo dough.
• and roll it up
• and place them on a tray lined with baking paper.
• Roll out the second dough in the same way.
• Add the filling and make a roll.
• and sort them on the tray
• 2 egg yolks
• apply egg yolk on the pastry dough
• shape with a fork
• You can shape it with a knife as in the video
• bake in a preheated oven at 190 degrees/370 F (controlled)
• the pastry looks great
