Welcome back to my channel!
Making kitchen knives is my favorite part in knifemaking. I really enjoy using them and trying to improve with every single one I make.
This handforged knife was made in cooperation with a chef cook, who told me exactly what‘s important in the everyday use.
I forged the knife out of 80CrV2 steel and made a octagonal hidden tang handle with mahaghony, walnut and a silver steel spacer.
The blade‘s got a 600 grit satin finish and I applied a mustard patina later.

About me: My name is Tim and I'm a 21 year old student. I got into knifemaking about two years ago, by watching videos similar to this one. Over the years, I gained some knowledge and last year I built this belt grinder to finally make my own knives. I do sell custom orders, mostly of kitchen knives, if you're interested, follow me on Instagram. My goal is to make inspirational and educating, as well as entertaining videos. I gained almost all my knowledge by watching KZfaq ideos, so now I want to give something back. Future plans: I want to make educational as well as inspirational and entertaining videos. The topics will be setting up my workshop and mostly making knives.

- building a gas forge (DONE!:D)
- how I etch my logo
-forging a touchmark stamp (DONE)
All my builds and machines are low cost but good quality. I’m a beginner as well as a student on University, so I want to get the best tools for the least amount of money. If you are starting your new hobby, consider watching me setting up my little workshop.

I'm always a bit scared of grinding after heat treatment, but you totally nailed it! Great inspiration, i will try it out!

I was too but if you keep the knife cool and under the temperature that you tempered at then you should do no damage to your heat treat!

Nice work, be careful how much heat you throw at the tang for that burn in. I saw temper colors on the ricasso starting to show. I use a wet rag wrapped around the blade and ricasso area to prevent any unwanted tempering. :)

What thickness was the steel before forging? How thick do you leave it before grinding and how thick when you heat threat it? That's a lot of questions ☺️, thanks and great job!

Im mostly using steel from 3 to 4 mm thickness and try to forge it down to 1,5 to 2 mm. I always leave plenty material before heat treat, at least 1 mm on the edge. Makes it easier for me, but I guess that’s also a personal preference 😄

Wunderschöne Klingenform. Klasse Video! Respekt vor dem Freihandanschliff, der ist dir perfekt gelungen. Gut wie du zeigst, dass der Klingenrücken abgerundet sein sollte. Top! (Das hat mir ein Koch, der in Gießen eins meiner Messer gekauft hatte, auch zurückgemeldet: Der Klingenrücken sollte nicht scharfkantig sein bei einem Kochmesser.) Übrigens man sieht das in meinen alten Videos auch noch, aber ich habe inzwischen gelernt: Bei der Bandsäge und bei der Standbohrmaschine keine Handschuhe. Am besten garnicht mit Handschuhen, außer vielleicht die Gummihandschuhe, die sofort zerreißen, wenn sie erfasst werden. Nur so als gut gemeinter Rat. ;-) Schöne Szene bei Einbrennen der Angel, wo der Rauch aufsteigt! Klasse Idee bei 11:40 mit den 4 Bildern gleichzeitig! Der Griff ist wunderschön geworden! Interessante Art und Weise, den Griff zu bauen, das hat was! Grandioses Endergebnis. Glückwunsch zu diesem tollen Messer! LG Michael

Vielen Dank für den tollen Kommentar! In letzter Zeit sind Küchenmesser echt mein Favorit und diese achteckige Steckerl-Konstruktion mag ich super gerne. Ich habe bei dem Messer auch ausführlich mit einem Chefkoch gequatscht und der hat mir einige Tips gegeben, die ich umgesetzt habe 👍🏼

Cooles Video. Was für eine dicke von Stahl würdest du empfehlen für stock removal für ein Küchen Messer und wie machst du ein Mustert patina ? ist es um den Carbonnen stahl besser von rust frei zu halten ? Grüsse aus Dänemark

Danke! Ich benutze meist 3 - 3,5 mm. Die Patina mache ich weil ich es ganz cool finde, es schützt aber auch ein bisschen besser vor Rost!

This is not a "how to" video, you're not teaching you're making a video for your own amusement. You're not a teacher you're an entertainer

First of all, the title doesn’t say „how to“, second, I’ve been learning almost everything I know from videos like this one. My goal is to make entertaining content, since I guess most of the people come here for the entertainment and don’t own a forge or a knifemaking workshop. But when watching attentional, you can still learn something 😉 If you’re more into tutorials, stay tuned for the next weeks, because I will make a in depth „how to“ video about grinding handles with explanations as well👍🏼
