In the process of demonstrating some techniques, I created a collection of knives using local steel and materials: a san-mai laminate Gyuto and two san-mai laminate cleavers.

Very nice craftsmanship much respect for what you do. Especially in regards to utilizing the indigenous materials. How does 1084 compare to 1095 high carbon steel?

Thank you!!! They’re very similar! I’d say 1084 is simpler to work with because 1095 is more sensitive to temperature. *more in depth answer is that 1084 doesn’t leave a lot of carbon to form carbides like 1095 does, so it’s much less sensitive to temperature and doesn’t require a temp soak like 1095 does. 1095 is much closer to 52100 than it is to 1084 :) Hope that answers the question!
