This former truck driver got off his truck to make some of the best Tonkotsu ramen in Tokyo. He gets to his shop at 4am to prepare the ramen and works till he closes his shop at 9pm, then after some clean up he gets ready to do it all again! What a hard worker! よく行くお店だわ、確かにちゃんとした家系ラーメンで美味しいけど、たまに無性にここのネギ飯が食いたくなるんだよね!

Wah looks delicious noodles soup. 6 hours (5 hours deep sleep is sufficient) to be fresh. In the 18 hours including eating 3 meals and toilet is ok. 1 hour Contingency: 1 or 2 times bathing for 20 min each.

This cook lives on only 4-5 hours of sleep per workday/work-night? Oh my God…he works Japanese salaryman levels of hours of 60-80 hours/week. I just hope his cooking job brings him joy and passion and not frustrations like most corporate/commercial jobs do.

長距離を若い時やってる人は一日20時間で何日でも働けるので… ちなみに運送業界はサラリーマンと違って1日12時間以上(下請け系は16オーバーざらに)が最低労働時間、という業界です。

I've worked manual labor when I was younger, doin something like it really makes you want to eat even the gunk. Some men prefer it to be included especially some south east Asians, that's why they don't scoop out the foam in some cultures.
