When you divide that ground beef and place them in plastic bags, before you seal them closed, flatten those squares to make them flat before freezing and not only will they be easier to store but will defrost faster when you need them!

If you’re single or a couple, get a toaster oven so you don’t have to heat up that huge oven for your little meal. It takes much less time to preheat.

Single lady here and I do the same thing with 1 lb of ground beef. Divide into fourths (sometimes thirds) and make anything from a Bolognese to a stir fry/wrap. Depends on my mood.

Taking a large portion of meat and saving them into single serving portion certainly opens up lots of possibilities. The Bolognese sauce is so easy and oh so good.

This is fantastic I'm rethinking my whole work lunch scenario. I've been meal prepping but it's mostly the same thing the whole week and I really get sick of it. I almost always freeze a couple portions, but not everything freezes well. For ground beef, I use the Costco frozenhamburger patties because they're pre frozen and pre-portioned so that's super handy. I love the giant meatball!!!

Not only they are great when you live alone or there are only 2 people also Single servings are great for health reasons as I have to eat separate meals often and I hate to waste them. While I love leftovers it's great to make something fresh ❤ your videos are perfect.

I think corn tortillas are superior for enchiladas and they stand up better to the liquid from enchilada sauce and some enchilada sauces are pretty watery or at least the last can I bought was. Jmo.

I agree with you on the corn tortillias. In Houston, used to be able to get good quality tortillas. Now in Western North Carolina, the pickings are slim. Last batch we bought were dry and fell apart.

It's Ricotta cheese. Technically, an Italian whey cheese typically made from cos's milk and is similar to cottage cheese but lighter and creamier. I use it all the time for lasagna and stuffed shell fillings but you can also use it as a topping for soup, salads or pizza. Probably more info than you were asking for but I love the stuff. :)

This not Shepheard's pie. This is cottage pie. Shepheard's pie is made from lamb mince.

These are great mashed potatoes. I have had shepherds pies in the UK many times and I think the mashed potatoes would stack up against any of them. What is different about the mashed potatoes you love?

Unbelievable! Why would anyone ever go to the trouble of preparing a single serving? Maybe a person realizes he’s extra hungry and his single serving is gone; guess he’ll have to settle for a peanut butter sandwich. Wouldn’t it make sense to use one full pound of ground beef in one recipe and freeze a couple of servings? Who wants to cook every meal? Senseless!

Each person has the own approach. A lot of people get tired of eating leftovers and enjoy the process of making a meal so they can have something different everyday. If making a full size recipe and freezing leftovers for later works for you, that is great!
