Oysters filter the water around them which means they taste different depending on where they're from, it's like night and day. East coast/New England ones are more earthy or taste like clay. West coast (and gulf, to a lesser extent) taste more brine-y, like how the ocean smells. Also (generally) you don't want to eat them during the late spring or summer (spawning season). The rule of thumb is only have oysters when the month has an "r" in it. That said, with modern farming techniques you can get oysters that are 'in season' any given time of the year.
