Becky, a tip for facilitating spreading of brittles, etc., quick-hardening candies: Don't put the pan you are pouring it into on a cold counter--especially granite or something that holds the cold. Put down a silicon pad or other heat-resistant pad, and put your pan on top of it. Those extra seconds achieved may make all the difference. A cold counter cools the pan and makes the candy harden faster.

Hey Becky, i have a tip for you and your viewers, about the sugar crystals. I was a pastry chef for over a decade and whenever I melted sugar like that, i put a well fitting lid on the pot, when I first put it on the heat, then bring to a boil. Remove the lid. The condensation "washes" the sides for you. I did this after many times accidentally seeding my sugar with the grains left on the brush. Merry Christmas and thank you for the videos!

Thank you! I’ve been making what a friend calls “chocolate caramel pretzel bark” but it’s supposed to have a toffee texture. I have done just about everything there is to do wrong, but this tip will help me so much! It’s delicious despite the mistakes, but I don’t want a grainy praline or a gooey mess…

@@kathrynwitte3398 you have the lid on before you put the candy thermometer in, while the sugar is still granular. It is not a good idea to put the thermometer in before the sugar is dissolved. It can potentially trap a grain of sugar and "seed" your candy .

Pro tip. For the salteen toffee put the salted crackers face down. So you get toffy top and salty bottom! Love you videos so much!

Tip: I used painters tape and tape my parchment paper to my counter so I can spread the brittle more easily

Peanut brittle has always been my moms signature candy. She had a specific pan and brush that were used just for peanut and nothing else. My dad even bought her a marble slab and inset it in the countertop so she could do the traditional stretching of the brittle. I always new it was getting close to Christmas when the house smelled like peanut brittle.

Hi Becky. You could laminate your recipes then you can use a white board marker to write on any notes or mark out your progress. They wipe clean and are ready for next time in seconds.

Beautiful job Becky!! That was alot of work and care you put into your lovely gifts! Just a little hint from an 'Old Cook' if you put a bit of butter or spray oil on your cookie sheet before you lay on the parchment paper it will keep it from sliding so much. Makes it a bit easier. And folding a damp kitchen towel and placing it under a mixer or chopper/blender will keep it from moving about and keep it quieter. You are an amazing young woman and an excellent cook! LOVE watching your videos!

I’ve made the saltine toffee cookies successfully and there is no need to wait before putting the chocolate chips on top of the pan when it comes out of the oven. Also, you can put a pan upside down on top of the chips. It will hold the heat in & they’ll melt in no time. The suggestion about the offset spatula was excellent. You don’t realize what a great tool it is until you actually use it.

I like the look of the peppermint pieces on the dark chocolate better than on the white. Personal preference. I think it stands out better.

*Baking tip I just learned this year! Spraying the cookie sheet with a little oil or greasing it with butter will hold the parchment paper still when you’re trying to spread things like toffee.

A couple of hints: when pouring out brittle, pour into disposable pie pans (buttered) in thin layer. Then when cooled you can put the whole sheet in a gallon bag, or break it up. My mother could have opened a candy shop...she was well known for her candies. She never used the spoon or spatula on the sides of the pan while stirring. Only stir the bottom. Same when pouring out candy into prepared pans. Then you can scrape the sides onto a saucer. Those are the family samples. This prevents and sugar crystals from getting into the full batch and turning the whole thing into sugar. She also swore to never make a double batch, it sometimes doesn't turn out. And finally, try to make candy on a clear day if at all possible. The extra moisture in the air will sometimes affect the candy, especially something delicate like difinity.

Yes, to all these hints! Another way to make an impressive peanut brittle gift is to leave the round whole instead of breaking it. If you use your pie tin idea, you probably could get three rounds per batch to gift, wrapped in saran wrap and a bow! Cute and Yum!

Carolyn, I lived in South Texas for several years. Perfect place to make divinity. The first batch I made, I turned the mixer on and started washing the dishes. I looked over and could tell the mixer was slower. At 5 minutes, the divinity was perfect to remove from the pan. It was so easy I made several batches, along with toffee and old fashioned fudge. I could have gone into the candy business, but I was too lazy!!

My dad was in his 90s and had stopped eating a lot because he just couldn't taste much. I knew that sweet and hot are two flavors that are some of the last to go so I made pecan and finely chopped jalapeño brittle. We found that the jars of pickled jalapeños brought the flavors together better than fresh ones.

I tend to hi-light key temps so my eye quickly finds it on the page. I also draw a line through major steps, like the difference between two bowls being mixed separately. Liking your recipes 😁👍🏻

I make lots of peanut brittle at Christmas time and alway pore mine out on parchment paper. Doesn’t stick nothing to wash and don’t have to worry about breaking any bowls!

If you warm your metal sheet in the oven a bit it will give you a bit more time to spread your candy.

If you warm the glass in the oven before use it would be tempered and less chance of it breaking when you pour hot liquids into it

This is the first year in over 10 years that I haven’t constantly been baking from halloween until the new year. I would make dozens upon dozens of cookies and fudge every night. This year I was just over it. I’ve baked a few times but I’m mainly trying to empty out my baking pantry for other things

An easy tip to stop your Parchment paper from sliding is to spray your pan with a little cooking spray and it will stay put.😊

I have been obsessed with watching holiday treat videos the past couple of days, so yours came up in the algorithm. I'm in awe of your ability to multitask - quite daring when doing candy! I really ought to get a candy thermometer and give some of these a go. I've done almond roca and the christmas crack before by crossing myself and offering up a prayer. Worked half of the time, the other half we don't speak of. LOL.

I am not a cookie maker, but have learned a lot watching this video. A tip I use for anchoring a recipe in place while I follow it is to use a magnetic to hold the recipe onto the front of the microware. It works like a champ! Happy New Year 2022!

I know this video is an older on (in the old house), and those almonds are LONG GONE, but if that ever happens again, just roast the pieces... you'll have to watch them a little closer, but there will not be any waste. Been a fan for many years! This video also brings back nostalgic memories in this kitchen of when you told Josh you were expecting Baby A!!!

I've seen people make peanut brittle and they clean granite or quartz countertop and lightly spray it with Pam, and dump the brittle on the countertop and spread quickly with a Pam sprayed off set spatula. The coolness of the countertop hardens it quickly and they break apart. It may be easier than fighting with parchment paper.

Hey thanks for some great ideas! I was surprised that you don't have trouble with the chocolate seizing when using "extract" since it has water in it. I was told to always use "oil" when flavoring chocolate! I do this with orange oil and orange candies calling them "Orange Meows". Wonderful if you are fan of orange chocolate.

Try putting a heating pad under your baking sheet, it will keep it warm while you’re spreading but not so hot that it continues cooking.

I actually like that you've made the peppermint candy thing upside down. I don't like white chocolate but love milk and dark chocolate and it usually deters me from trying new things when I see white chocolate but yours looks good and I definitely want to try

Becky i like the details you provide to help make successful treats. I usually put my cpokie sheet, for almond rocca, in the oven just enough to warm it. This helps to spread the rocca, also works great for peanut brittle. Sor SAFETY please put a damp towel or silione mat under your pots when you are working at the counter. It only takes a small distraction to have the entire pot fly off counter , and that Hot product goes everywhere , including people near by. Love your programs.

You can toast nuts even if they have been chopped. Beautiful gifts to give and so easy, to make. I’ve made nougat before. You have to move fast with that and have everything ready.

I was a Bluebird and a Camp Fire Girl. I haven’t heard anything about that in years. Throwback memories. A side note about taking hot desserts out of the oven - never use flimsy foil pans. My mom had a foil pan fold on her coming out of the oven and the sugary pie ingredients spilled down on the top of her foot. It stuck and burned her pretty severely. Wearing shoes is important too. She had on slip on house shoes which were not much protection.

To spread hot candy, place another piece of parchment paper on top and use your rolling pin.

So fun! I love making candies and chocolates this time of year. I had a group of friends and we did a chocolate day and all worked together to create enough chocolate for each of us to go home with boxes and boxes of gifting chocolates.

You always do such a great job with all the dishes you prepare! The sweet treats look divine and I'm sure they taste delicious. A little suggestion when using parchment paper on sheet pans and need to spread, try clipping small paper clip binders to keep parchment in place, I found that helpful. I really enjoy watching your cook once eat all week preps.

Almond rocas are my fave but I haven’t been able to eat them since I developed a ton of food allergies. I didn’t even know I could make them at home, so I am going to attempt it at some point and try to make them allergy friendly for me to eat.

Our family makes the saltine toffee every year in the spring for Passover. We sub the crackers for matzah. So good!

I’ve never done a mass production bake like that, it’s usually just one item at a time like fudge or cookies. But I’m so inspired to make at least 4 maybe 5 things to give out this year :)

Great video! Thanks for taking us through the process with you. I plan on making some condensed milk/chocolate chip fudge (also with different flavors of chips) and butterscotch haystacks to add to my goodie trays. Have you ever made Martha Washington candy? So yummy 😋
