How do you get that cool rendering window? Can't find anything about it in the manual.

Double click on the rendering status bar at the bottom and it opens up

What's the purpose of the remote.? I thought the player (rpi) has the sequences and media along with telling the controllers what to display?

The remote FPP device also holds a sparse sequence with pixel data tied to it's ports so the connection from the player to remote is then only sync packets and not full pixel data
